So. This whole cooking for one thing… I haven’t really figured that out yet. 😉 It took me 3 1/2 days to finish the quiche I made last week and as many days to finish the ham and bean soup. I suppose I could have frozen the extra portions but I don’t have any storage containers here.
The Eating Local Challenge is going well, but I didn’t buy much this past week because I still had a bunch of veggies to use up from the previous week. I plan on making a pan of roasted beets and sweet potatoes for dinner tonight and maybe a french toast {or rather a leftover bread} casserole for tomorrow.
I also picked up The Girl and surprised her with a mini weekend adventure to Burlington, Vermont where we spent a whopping $36.99 on a half gallon of real maple syrup and $6 on a loaf of bread at the local Farmer’s Market. Lucy came along and had a blast in the big city with us.

Cooking for one is a challenge if you want any sort of variety in your meals and I’m really looking forward to your take on how to approach this. I’ve been on my own for a couple of years now and still find it to be a chore.

Agree. I get so sick of throwing out food when it goes bad or because I just can’t stomach eating the same thing for the fourth day in a row. Meal planning for one is a huge pain in the neck.

My son went to college at UVM in Burlington, Vt. Great area. Did a lot of shopping in Burlington, great farmer’s market, and local cafes.

Here’s a tip: if you have high quality maple syrup you can store it in the freezer and it will not freeze and will keep basically forever! Just portion it out as you need it. Don’t attempt this with anything store bought, it won’t work.

I would rather beg naked in the streets than eat beans as often as you seem to! I applaud your frugality and healthy menu but the texture of every bean I have ever tried is so off-putting that the smell of them cooking turns my stomach. Oatmeal also smells vile to me, as does mayo. Too bad chocolate and red meat smell so enticing to me!

Just wondering, do you include the cost of meals purchased outside your home in monthly grocery cost? Coffees? Pastries? Snacks?

Great question. We have a grocery budget, a “date” budget {for me and the HH’s 52 dates} and a travel budget which includes gas, airfare, hotels, treats {pastries, teas, meals out} while on the road. The syrup and the food fell under the grocery budget because it’s something I would eat at home.

For all of you looking for “cooking for one” ideas, I recommend the blog “Budget Bytes.” She does a lot of meals for 2 or 1 and freezing meals when the quantity is higher than that. I turned my parents onto her because I think she has good recipes for smaller family uses.
