Well, I hate to say it but I went over budget again this week.
While we were away The Girl picked up our case of Zaycon chicken {free thanks to credits} and I totally forgot about it until I opened the freezer in the garage and found it. The chicken is now thawing in the refrigerator and taking up some serious prime real estate.
Costco $28.34
We ran out of rice, Costco is the cheapest place in town to buy it so we stocked up. Yellow bananas {shocking, I know} plums and croissants were on the list as well. We managed to get out the door without buying anything extra.
Fred Meyer $9.75
Cherries were on sale for $1.77 this past week, tuna was $0.69 a can and the bottle of Pact juice was a Fred Meyer friday freebie.
Albertsons $5.46
Baralicious canned chili for Monkey Boy {$0.99 a can} and some much needed russet potatoes for the HH’s favorite chicken pot pie dinner.
Here are the meals I ate last week {minus the snacks}:
Monday
Breakfast – Toasted bagel with butter
Lunch – Nectarine, half pb sandwhich
Dinner – Big salad
Tuesday
Breakfast – Toasted bagel
Lunch – Big salad
Dinner – Chicken pot pie
Wednesday
Breakfast – Toasted bagel
Lunch – Random soup from the freezer
Dinner – Chicken Stir fry
Thursday
Breakfast – Oatmeal with bananas and dried cranberries
Lunch – Cookies. Cookies and more cookies 🙂
Dinner – Cereal
Friday
Breakfast – Steel Cut oats, banana
Lunch – I have no idea
Dinner – Chicken Curry and Rice
Saturday
{late} Breakfast – Waffle with strawberries {I slept in until 8! Wahooo}.
Linner – Pizza night
Sunday
Breakfast – Bacon, egg croissantÂ
Linner – Tuna casserole, biscuits and cinnamon rolls – You can never have enough carbs. 😉

What will you do with all the thawed chicken?

Yes, inquiring minds want to what your going to do with all that thawed chicken. My guess is to cook it so it doesn’t take up all that prime real estate in the freezer and makes (cooked and frozen chicken) for easier meal prep.

I should probably not read this post when I’m really hungry for lunch. The pot pie, stir-fry, and salad look fantastic!
Are you mostly using home grown produce in them?
I just got back from 1.5 weeks visiting family in the northeast. My MIL is a fantastic cook. The last 1/2 week I was helping my step-dad who had back surgery. The man lives alone now and eats zero vegetables. So I shopped for veggies for myself. I can officially say that if I don’t see a raw carrot or pepper with hummus for a month, I’ll be happy.
My freebies this week … so I was invited last minute to a kid birthday party really close to my house, at a park where my ‘hood has a Sunday potluck. Anyway, they were cleaning up the party when our potluck started. My friend (the mom of the birthday girl) does not cook or eat in. Ever. So she left all of the leftovers. Most of the potluck goers didn’t want them either. For the first time ever, I ended up taking home more food than I came with:
– a huge crudite tray. So I roasted the broccoli and baby carrots. I chopped the baby peppers for a greek salad. Still some raw snap peas left to eat. But not with hummus.
– About 1-2 lbs of fresh strawberries. Those will go fast
– Tortilla chips. My husband has been hitting those pretty hard.
