I’ve spent almost $54 on groceries so far this month so my plan of attack for next week is to BUY NOTHING so I don’t end up over budget at the end of the month. I think if I don’t look at any ads I should be okay. We’ll see how it goes. 😉

I stopped by Main and Vine again last week on my way to the library to snatch up a couple more loaves of Tillamook cheese @$3.99 a loaf. The best buy date on the package is October 2016 so we’ve got plenty of time to use it up. Note to self: hide cheese when I go on vacation next month so the HH doesn’t feed it to Lucy.

After going to the Bellevue Arts Museum for our “date” on saturday we stopped by to visit my parents and have lunch with them. My mom gave me a bunch of stuff she no longer wanted for me to sell at my yard sale this summer and a bag full of treats {tea, bruschetta mix, walnuts, candy, fabric softener {totally random} and some vases for my hooked flowers. Have you ever tried Lu Cinnamon Sugar Spice cookies? They are my all time favorite and VERY HARD to find. Go mom!

Lunch – I have no idea
Dinner – Pork roast with carrots, potatoes, sauerkraut and apple pie
Wednesday
Breakfast – Apple pie
Lunch – Apple pie, egg salad sandwhich
Dinner – Leftover pork roast
Thursday
Breakfast – Strawberry cream of wheat
Lunch – Split pea soup from the freezer
Dinner – Beef tacos with handmade tortillas
Friday
Breakfast – Beans, rice and beets 😉
Lunch – Leftover tacos
Dinner – Rigatoni with meat sauce and homemade olive bread
Saturday
Breakfast – Steel cut oats with frozen fruit, hot chocolate
Linner – Caramelized Onion and Fig and Gorgonzola Pizza {Purple Cafe} with my parents {their treat}
Sunday
Breakfast – Eggs with spinach, mushrooms, black beans and cheese, toast and yogurt
Linner – Super Bowl Snacks – Salami and cheese, veggies, breaded chicken, mozzarella sticks, olives, quesadilla

I’ve tried making your homemade tortillas. Mine are always so springy they won’t roll out bigger than a small pancake. Help! What am I doing wrong?

Hmm… too much flour maybe? Are you putting a bunch of flour down on the counter before hand?

If you are rolling them out and they keep springing back, let them rest for a few minutes and try again. Something to do with the gluten.

Been following you for a long time and I love you money saving idea’s. Have had the same idea to cut our grocery budget this year to 100 hundred dollars a month. January went fine 98.54 and February is on tract too. We are usually on a 300 dollar budget, but even with that we tend to have a surplus. So I am glad that I have you to challenge me to keep on track. Keep up the inspiration.

When it comes to the big blocks of cheese like that, I like to freeze them. If I could get those for $3.99 – that’s about $7 off for my current costs, so I would be buying a LOT and freezing them. Some of the flavors come out a bit more crumbly than they would be otherwise when they thaw out, but I shred most of that anyway, so it’s actually helpful. I also don’t have to worry about using it up or wasting it. Definitely worth a stock-up.

I put everything on my salad. It depends on the dressing that I’ve made for the week. (I don’t put cheese on a salad if I have Asian dressing, for example). Whatever veg I have, nuts, sunflower seeds, fruit (if it goes).

I shred the cheese first before freezing…lasts a long time and is convenient for everything!
