So I made this pie for the Easter holiday, but based on its level of deliciousness, I’ve pretty much decided I’m going to make it for EVERY holiday going forward. Obviously for Christmas and Thanksgiving and the major holidays, but isn’t tomorrow like National Trim Your Shrubs Day or Knit Your Cat a Sweater Day? Both of those deserve to be celebrated with a yummy key lime pie. Even if I possibly just made the up.
Ingredients
Crust
1/3 cup sugar
1 stick unsalted butter, softened
1 dash of salt
1 1/2 cups, plus 2 tablespoons flour
1 extra-large egg
1/2 teaspoon vanilla extract
2 tablespoons molasses
1/2 tablespoon ground ginger
1/4 teaspoon ground cinnamon
Filling
1 {14 oz} can sweetened condensed milk
1/2 cup key lime juice
4 extra-large egg yolks
1 tablespoon vanilla extract
Directions
Preheat oven to 325 F. In a stand mixer or mixing bowl, cream together sugar, butter, and salt until smooth. Add remaining crust ingredients and mix with a dough hook to form a smooth dough. Lightly flour a flat surface and roll dough out into a circle about 13 inches wide and 1/4 inch thick. Lightly press the dough into the bottom of a tart/quiche pan with a removable bottom. Trim of excess dough and bake 13-15 minutes, or until golden brown.
While crust is baking, whisk together all filling ingredients. Once crust is done, pour mixture into pie shell and bake for about 15 minutes. Cool pie completely before serving. Enjoy!

Isn’t it the best!! Nothing like a piece of Key lime pie on a hot day. I live in the Keys so EVERYONE has their own “family famous” recipe and swears theirs is the best. We even have a Key lime pie contest every year at work. Some swear by a graham cracker crust, others with a regular pie crust…….me, I like em all. Variety is the spice of life I say!

That looks amazing, Mavis!! Key lime pie is one of my favorites!! What is your trick to quickly juicing those darn key limes?! I made one of these a few weeks ago and it took me over an hour to get 1/2 cup of juice! It was worth it but… lol! thanks 🙂

Tomorrow is May Day. Put flowers in a tiny May Basket and put it on top of the pie. When I was little, we made May Baskets with flowers and candy inside crepe paper decorated baskets and took them to friends and the Olde Ladies down the street. Now I am the Olde Lady, and I’ll be planting all the flowers from Costco into baskets and those white frosting buckets we get from Albertsons. Then I will decorate my Gazebo and driveway with all the pretty baskets. We are to get to 83 by Friday. I heard you were to get 80 plus weather today. Enjoy your special time taking care of your little girl. Too soon she will FLY.
