Last week was a busy one around here with lots of quick and easy meals. Working at the factory is hard, let me tell you and doesn’t leave much time for creative recipes or anything else.
This week, however, will be different. Why? Thanksgiving!!! I think I’ll use my break time today to figure out exactly what I’ll be making.
But first, here are the things we ate last week.
Darn quesadillas.
Costco chicken salad with cranberries.
Freezer meal stuffed shells.
Pizza Pizza!
If you like spicy food, like it feels like your mouth is on fire, you might want to try Trader Joe’s Fiery Hot Chicken Vindaloo. I must have forgotten that this was TOO SPICY for us when I tossed it in the cart on my last Trader Joe’s stock up trip.
My taste buds were ruined for the rest of the day. Even the HH said it was too spicy. And that’s saying something!
I redeemed myself the next day though with a pan of homemade tuna casserole. Nothing beats a tuna casserole. Especially on a cold and windy day.
It was another crazy busy week around here. And I suspect this week will be just as crazy. But hey, after this week it should be smooth sailing… right? The freezer will be full of leftovers, the decorations will be up and we’ll finally get to relax a bit.

Things have been busy here also! We had to have half of our oak tree cut down as it was leaning over the house. One strong wind (we live in FL) and we could be homeless. We know that the other half of the tree will most likely die since so much was cut off but at least it is leaning in the opposite direction. It was way too expensive to have them cut down all of it. They even had to use a crane so that the limbs didn’t fall on the house as they were cutting them. Hubby is now busy burning up all the limbs (we saved money by having them leave it instead of carting it off).
Tomorrow I have an upper endoscopy procedure – where they will have to give me anesthesia and I always have a reaction to that. They know about my reaction, so hopefully, they will prepare the appropriate medication. I am not looking forward to that at all.
We have also had several parties in between, making & shipping cookies to the grandkids, running errands and packing up orders for my shop. I am not very hopeful that things will calm down after Thanksgiving . . . I’m thinking it will be in January for me . . . I love the holidays, but I also love when it is time to rest.

I don’t know why I forget about tuna casserole; we both like it so much. Seeing you post about it makes me want to prepare it. It is now on the schedule for Sunday, after all the family leaves.

It’s been a busy week. This week I am doing a pumpkin bread sale to raise funds for next years book bag drive. We have over 40 loaves spoken for. I stayed up baking last night. I use your recipe with the crumble when I do this. I do plain and with chocolate chips. I will be baking again all night tonight and inviting friends to help. I’m about half way through with the baking. We should be able to buy half of the book bags for the giveaway this Summer, the bags are the hardest thing to find a sponsor for because of the cost. I’m considering doing a cookie sale for Christmas as well. But, we’ll see. First things first, finish the pumpkin bread, then make Thanksgiving for five people! I can do this lol

If something is too spicy, stir in some plain yogurt or sour cream, it cuts the spice significanly!

Or stir in some cottage cheese for the cooling properties as well as extra protein.

You’ve been busy! I just decided what is for Thanksgiving- we will either be 5 people or 9 ( my son, his wife, and little ones are sick and if they aren’t well- they are uninvited because I can’t risk them getting my mom sick)…either way not a super big group so I’m doing:
Turkey breast and small ham
Funeral potatoes
Green beans with bacon
Green salad with apples, blue cheese, pomegranate seeds and candied pecans
Rolls (ordered from Great Harvest because I don’t feel like baking them)
Pumpkin pie, pecan pie (both homemade)
Bundtinis from Nothing Bundt Cakes (because they’re delicious and cute)
Other than that it’s time to start decorating for Christmas so that’s on my agenda for the weekend..Happy Thanksgiving!!!

I highly recommend Brianna’s Blush Wine Vinaigrette for salads with bleu/gorgonzola cheese, fruit, & nuts. And don’t forget the red onion! :^)

▢ 1/3 cup olive oil
▢ 1 tablespoon honey
▢ 2 tablespoons apple cider vinegar
▢ 2 teaspoons Dijon mustard
▢ 1 tablespoon shallot minced
