The HH offered to make dinner.
I turned him down and made my own.
Date day…. I love it when there are leftovers.
Hot peppers harvested in October… and then hung by the wood stove to dry.
Mississippi Pot Roast {again} but this time with scalloped potatoes.
There were also Fisher Scones, the left over split pea soup from last week and a frozen pizza.
But who cares what we ate late week…. This week, it’s all about Thanksgiving!!!
What I have planned for our Thanksgiving menu:
- Roast turkey with Spiced Christmas Jam {slathered on top of the bird the last 30 minutes of roasting}
- Cherry Cola Jello Salad
- Carole’s Creamy Grape Salad
- Broccoli Bacon Cashew Salad
- Homestyle Scalloped Potatoes
- Amberlina’s Sweet Potato Casserole
- New England Style Buttermilk Rolls
- Cheesecake {It’s a toss up between a Simple Cheesecake and Mrs. Hillbillies Amaretto Cheesecake recipe.
There will only be three of us for Thanksgiving this year, and while I know there will be a ton of leftovers, it’s just not Thanksgiving unless all your favorites are on the table. Plus, HELLO…. Thanksgiving is meal planning at it’s finest if you ask me. You cook on Thursday, and you don’t have to cook until the following Monday…. or even later if your’e super lucky.

Yes! Thanksgiving! We have a “smaller” gathering this year as well, with only the kiddos still at home and 1 adult daughter joining us for a total of 10. Were having your Rolls as well, but we call them Happy Husband Buttermilk Rolls! ☺️

I am making my mama’s cornbread dressing. This recipe has been in the family for at least 5 generations and is typically southern. My mama used to make so much that she would use a dishpan and her hands to mix it up. It’s nothing but cornbread, chicken broth, onions, eggs and poultry seasoning. She always made giblet gravy with it, but I never cared for it.
I love me some corned beef hash!! In my mind it’s a Yankee thing, but this Southern girl LOVES it!!

Sounds delicious! I love leftovers too my family has already told me they can’t wait for leftovers for turkey enchiladas. My daughter is bringing a friend from school and her family has a tradition of Mac and cheese with stuffing on top?? So I will be making mac and cheese from scratch for the first time ever…fingers crossed. Happy Thanksgiving.

The cheeses I used were Monterey Jack, Cheddar, & parmesan. I used 8 oz blocks for the cheddar and Jack and freshly grated them. I used about 4 ounces of fresh grated parmesan.

Stuffing! Just like my mom used to make. This will be our first Thanksgiving without her, so it will be especially bittersweet. I am going to skip a green veg in favor of the grape salad (since I have all the stuff for that and I can’t seem to find any deals on broccoli—what’s up with that??).
We did a pre-Thanksgiving with my son who is away at college. I asked him if he wanted me to make a turkey or a chicken. He chose chicken and I totally cheated with a Costco rotisserie chicken. We cut it just like a turkey and we all loved it! So, I think I know what I will be doing once we are a “small” T-day. Just enough leftovers, made stock in the instant pot for soup with the carcass. So great! You might consider for future Tdays.

We’re doing a small Thanksgiving at my MIL’s. My FIL is out of the country working and I think will still be gone. She is doing a roast chicken and deer steaks (to appease my husband for the lack of traditional turkey haha). I am bringing broccoli, rice, and cheese casserole (which I’ve never made and isn’t a dish I grew up with, but it looks good). I’m also making a toll house pie which I’m very excited about! Growing up Thanksgiving was always hosted at my house. I made the five cup salad for my mom. A cup each of pineapple, mandarin oranges, mini marshmallows, shredded coconut, and sour cream. It also wouldn’t be the same without pumpkin bread – my great grandmother’s recipe.

It’s only the three of us for Thanksgiving this year too, and we are having STEAK! Can’t wait! 🙂 It’s going to be a simpler meal because I don’t want to cook for several days for one meal. 🙂 I love cooking and I’ve done the whole shebang for just our family before but this year I just don’t feel up to all that cooking! 🙂

Just three of us this year, too. I have to have Green Bean Casserole. Not the new fangled fancy kind, but the can of cream of mushroom soup and canned green beans and Durkee French fried onions. God help me, but I love that stuff!!! And gravy. Lots of gravy.

Thanksgiving must include dressing with lots of celery and onion. Thats the flavor with turkey, gravy, cranberry sauce, and old fashioned green bean casserole, and mashed potatoes. I have to confess I actually use stove top and add the extra celery, onion and butter…..its good and so easy. I am planning to make your creamy grape salad……no idea how it will be received, but its the only fruit everyone likes! Hope everyone has a lovely peaceful holiday!1

For Thanksgiving we’re having cornbread sausage apple sage stuffing (I combined a couple recipes one year, and it was so good I’ve never made another), cranberry sauce, applesauce, twice baked potato casserole, four cheese macaroni and cheese, a new sweet potato dish, collards, and turkey. For dessert, we’re trying a lemon orange meringue pie. I also made French bread for turkey sandwiches.
I’m also making and freezing cinnamon rolls, Christmas candy, etc. this weekend so I don’t have to mess with it in December.

My daughter is hosting this year. Her first big holiday dinner, however we’re all bringing sides to help. Seventeen people including five ages three and under. It was be noisy, chaotic and fun. She raised heritage turkeys this year so we will be enjoying that. I’m bringing the stuffing that I make with sausage, my mom’s curried potato casserole recipe plus I’m in charge of gravy. I encouraged her to get Costco pumpkin pies- a truly good value!

Since my son does not have his kids for Thanksgiving, there will only 4 adults. We will have a duck, homemade dressing with sage that I grew, sweet potatoes, mashed potatoes, and green bean casserole. And four pies. I know what is important ! I am not ready to pass this tradition on to my daughter–because I love the leftovers. But there usually isn’t and French silk pie left.

From my grandmother’s time we’ve have always had Merry Berry Salad. Since we are separated by distance now, the cousins, nieces, etc still make it & send pictures of it to each other.
