Hello Monday, and the start of a new week!
We woke up to a wee bit of snow this morning and it looks so magical, I am declaring today a snow {and pajama} day. Well, at least for me. The HH has errands to run. 🙂 Working from home, it can be pretty cool like that.
This past week we enjoyed a little bit of everything. A few homemade meals, some Trader Joe’s freezer meals and a bit of leftovers. Getting older is kind of fun sometimes… You can eat whatever you want.
Here are most of the meals we ate last week:
Big salads. I love me some {thawed} frozen peas in my salad!
Mrs. C’s salt potatoes. Have you tried these yet? They turn out PERFECT everytime. And yes, you can eat just a bowl of potatoes for dinner. It’s allowed.

There was still some left so I popped it into a zip baggie and tossed the extra curry into the freezer for another time.
Trader Joe’s spinach and ricotta ravioli. Very good! We both agreed we’d buy it again.
Trader Joe’s scallops and mushrooms in cream sauce. I didn’t realize that this should have been served alongside pasta… Oh well. The HH said he liked it anyway.
Those Costco chicken jalapeno meatballs! Get yourself a package. I tossed ours in a simple sweet and sour pineapple sauce and stored the extras in the fridge. Now everytime I open the fridge I get to pop another one in my mouth. They are delightful. Even at 6 am. 🙂
Cheese and crackers. Why go to the trouble of spending 30-45 minutes on making a meal when you can serve cheese and crackers in less than 5 minutes?

Our big purchase of the week. Bananas! They are so filling! I think I’ll let a few of these get super ripe though so I can make a batch of banana nutella muffins.

We call salt potatoes crack potatoes in our house. They are so good! If you have any leftovers fry them up with some onion and serve with an over easy egg on top the next morning – even better!

We really like the Trader Joe’s chicken spring rolls served with the Trader Joe’s sweet chili sauce to dip them in. Also I like the Trader Joe’s mini wontons. When I stir fry vegetables I throw a few in on top and towards the end or I make a quick soup with chicken stock, veggies, and add the wontons.

I love bananas and I eat one every morning. I can’t eat breakfast when I first get up – it upsets my stomach but a banana hits the spot.
I have been eating from the freezer – eggplant parmigiana (for 3 days – one of my favorite meals), vegetable soup in a bread bowl (had one bread bowl left in the freezer – need to make more) and 2 kinds of chicken wings (some were marinated in raspberry vinaigrette and the others were marinated with teriyaki sauce).
I love potatoes for dinner! Sometimes it is just French fries, but I also love cutting up some potatoes, boiling them until tender (drain off the water) and then putting oil and vinegar on them (or Italian dressing). Very filling! (PS: I even love can potatoes fried up in butter.)

Fred Meyer has had bone-in chicken breasts for .99 lb for the last few weeks. Totally unadvertised. Ive been buying a couple packages at at a time (4-5 lb ) and repackaging into different things.
I made marinaded chicken on a stick, cut some into chicken tenders, some whole and saved the bones for chicken stock.
QFC has potatoes on a clearance price. 5, 8, or 10 pounds of potatoes for .99!!!! No limit and that is a steal of a deal!!
I bought 30 lb…. made frozen french fries with 1 bag and will probably make mashed potatoes with 1 of the other bags.

I love peas in my salads, too, but I forget to defrost some during prep and 3/4 through eating my salad I remember that I forgot the peas… every.single.time.

I made a mushroom stew recipe that was featured in the Costco Connection last month. It was delicious! We don’t really get cold weather here so whenever the temperature dips a little I try to make a comfort meal! I usually plan our meals based on what is ripe in the garden. I also roasted sweet potatoes, beets, and radishes this week and made a garlic butter, so good!

Our new place is up above ‘The Valley’ (San Luis Valley) — I didn’t know this when we moved here, but it’s known for potatoes. Big-time.
So someone brought pounds and pounds of potatoes, already bagged up, to church the past few Sundays…and said, “Help yourself!”
So I did. Fifteen pounds of lovely red potatoes, on the house.
And there’s an Amish bulk store, only about 20 miles away. Whoo hoo! Now if I can only find someone giving away onions, carrots and celery…

It’s a crackpot week. Basketball season is here, so many nights of pre made meals. Tonight is cashew chicken. Later we’ll be cooking southwest chicken, and then hopefully meatballs

I got a fresh turkey breast, a pork tenderloin, and a package of boneless pork steak for 50% off. This came to around $25. I had a digital coupon for $10 off if I spent $50 total, which isn’t hard to do nowadays, so I figure my meat cost me $15. This was at Safeway.
There are only two of us so I will get 2 meals from the tenderloin and 2 meals from the pork steak. The turkey is in the freezer to use later when I am feeding more people
