I picked up a bunch of tuna on sale this week at QFC, and I was looking for some quick and easy ways to use it up. I found this tuna wrap recipe and, after making a few minor adjustments, knew I had all the ingredients on hand. So I whipped it up and it was the best lunch I’ve had in awhile. And it was so easy I could make it in my sleep.
So if you happen to have some extra tuna lying around, I totally recommend making this wrap. The recipe only makes one wrap, but mine was large enough I only ate half and gave The Girl the other half. We were plenty stuffed with just the half, but if you’re feeding an army {or more than 2}, it’s easy to just double or triple this recipe and have a nice little lunch.
Ingredients
1 small can tuna fish, drained {I mixed mine with a few tablespoons of mayo, but that’s totally optional}
1 flavored tortilla
Large handful of fresh baby spinach leaves
2 tablespoons feta cheese
8-10 super thin cucumber slices
3 tablespoons chopped roasted red peppers
2 oil packed, sun dried tomatoes, cut into strips
1 tablespoon balsamic vinaigrette
Directions
Place wrap flat on a plate. Spread tuna onto center of wrap. Top with spinach, cheese, cucumber, peppers and sun-dried tomatoes, and then drizzle with vinaigrette. Roll tightly and cut in half. Enjoy.
