Any recipe with microwave in the title is going to be my new best friend because I automatically know it’s going to be quick and easy. This brittle recipe is both of those things, but HOLY CATS it also tastes amazing. Yum!
And as a double bonus it’s the perfect addition to any treat plate you gift anyone. The shiny little peanuts are so pretty looking you might have second thoughts about eating them. Don’t. Eat them ASAP.
Ingredients
1 cup sugar
1/2 cup light corn syrup
1 1/2 cups salted peanuts
1 teaspoon butter
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon vanilla extract
Directions
Line an 11×17 baking sheet with a Silpat {greasing the sheet works too} and set aside. Turn your microwave to the high setting {100 watts}. In a microwave safe bowl, combine sugar and corn syrup. Microwave for 3 minutes. Remove from microwave and stir. Heat again for 2 minutes 15 seconds longer. Stir in peanuts, butter and cinnamon. Return to microwave and heat for 30 seconds or until the mixture is a golden yellow color. Immediately stir in baking soda and vanilla until foamy.
Quickly pour onto prepared baking sheet and spread with a spatula. Refrigerate until firm and then break into pieces. Enjoy!

My mom used to make lots of this w/o the cinnamon every year. It was always fun to see the baking soda foam up the candy. I just found the 6 min microwave carmels. They will change your life!

I make this every Xmas and it’s always awesome. Never thought to add cinnamon! I have a huge Pyrex measuring thingy and the handle really helps otherwise you are trying to hold a heavy and hot bowl and scoop out sticky peanut brittle quickly before it hardens. Also — try cashews, hazelnuts, almonds or a combo!

I make this using raw peanuts from WINCO. They are really cheap there. I have never added cinnamon, but think it sounds delightful.

Well, I just tried this tonight, and it was soooooo not good. The sugar/syrup combination was too stiff by the time the nuts were added. Couldn’t even get them stirred in all the way. 🙁 A big, gloppy mess. Had to throw it all out, and use another recipe. I’ve noticed the other recipes I’ve tried used more butter than just 1 tsp. I wonder if that could be it?
