Hello and happy Monday! After several days in the mid to upper 80’s it was nice to wake up this morning to much cooler temps. I don’t know about you, but 65-70 degrees and sunshine is my happy place. Once it hits 80… I’m toast.
Apparently the apple pie at Costco is back {wahooo!}. I put it on my grocery wish list {we’ve got a Costco shopper on our street} and after eating at least half of the pie myself, I think I’m good on apple pie for the year. 😉 We were also pleasantry surprised when we requested {and received} a box of burgers and a package of steak for the grill.

The HH has been firing up the grill again…
It took us nearly an entire week to go through the 3+ pounds of potato salad he made.
It really is the best potato salad on the planet…
But when you find yourself eating leftovers for breakfast several days in a row, it’s a bit much.
Tuna salad with chopped apples and relish. Yum Yum Yum.
My new favorite salad: Chopped cucumbers and tomatoes with goat cheese and pumpkin seeds tossed in Ken’s Greek salad dressing.
After a bit of a late start, the lobster shacks are beginning to open up here in Maine and the HH couldn’t be more excited. I’m just happy to see date days back on the calendar and I’m looking forward to exploring more of the Maine coast this summer.
Salmon and asparagus. I usually add a little soy sauce, lime juice and then sprinkle a little brown sugar over the top of ours before popping it in the oven. How to you prepare yours? I was thinking of having my husband grill it outside next time.
Frito pie!! It was the HH’s birthday last week and can you believe he had never tried Frito pie before? OH MY WORD he LOVED it {and so did the rest of us}. We don’t normally buy Fritos and it’s a totally a teenager junk food kind of dinner, but if you want, I can share the recipe.
And last but not least, The Girl and I also made a strawberry pudding cake for his birthday. Nearly 20 years ago we went to our neighbor’s house to celebrate her little girl turning one. ONE {oh how time flies} and my neighbor had made this cake. The cake was so delicious, I asked for the recipe and it has been the only cake I’ve made for the HH’s birthday ever since. 🙂 Traditions, it’s funny how they get started sometimes, don’t you think?

That strawberry pudding cake looks delish. I’ve been doing salmon with a lemon-garlic- butter sauce with a little honey and dill in it. I might try the brown sugar aa a change.

We’ve been eating more meatless meals lately. I love veggie meals. I grew eating Frito Pie. We still do on occasion. It’s an easy and fast meal. I do like it better with homemade chili. It’s healthier and I know what it has in it. Nothing I can’t pronounce. I do have to be careful of what I eat due to kidney disease.

I’d try Frito pie! And I use your BBQ Sauce recipe on salmon.
We had hot dogs, corn and black bean quesadillas, copycat Shake Shack burgers, 4 Cheese Spaghetti Squash Alfredo, shrimp stir fry, and sausage and peppers over rice. I made the hot dog buns, hamburger rolls, and tortillas from scratch, and we grew the snow peas for the stir fry and greens for the side salads we had. We’re nearly out of steel cut oats for breakfast (hard to find enough in stores now we only shop once a month), so I also made carrot zucchini muffins and a big batch of peanut butter banana granola. Tonight’s dinner will be shrimp salad on leftover burger buns.
In other food news, my refrigerator was driving me up the wall (it’s narrower than my shoulders but very deep, so things are constantly getting buried or falling out), so I completely emptied it, scrubbed everything down, and completely reorganized it.

Yes, I too admit to eating potato salad with my scrambled eggs for breakfast this week! Must make smaller batches!

Yes please for frito pie recip. I used to eat a small bag of Fritos back in Jr high almost everyday with jalapeños and nacho cheese. It’s been forever since I’ve bought any and this recipe looks so yummy.

We had salmon last night. I usually scampi style mines. I baste it with melted unsalted butter and pressed garlic. Then I pour white wine over it, squeeze fresh lemon over it and toss the lemon in, and I top it with fresh cut chives. I usually bake it in the oven or wrap it in a foil packet and toss on the grill. I remove the skin before eating, as I have little kids who would freak if they saw it. They love it.

When we still had street fairs, a local group would sell tacos in a bag using the small Frito lunch size bags to put the other ingredients in. They made lots of money doing this.
After making your strawberry cake for my husband, it was the only cake he requested the rest of his life! When strawberries are available now, I just dream of making the cake as I don’t cook where I currently live.

I use Mr. Yoshida’s Cooking and Grilling Sauce for my salmon and chicken. Brush it on the salmon before grilling or broiling. Marinate the chicken in the sauce for 30 minutes or so. Plenty sweet, no need to add the brown sugar on top. This stuff is yummy! You can get it at the store or Costco.

My favorite way to cook salmon on the grill is on a bed of sliced lemons (about 3 for a full filet). I just do olive oil, salt and pepper, then squeezed the grilled lemon on top after. Delish!
However, my FAVORITE way to cook salmon is in the oven (400* for 15-17 minutes). On a foil-covered cookie sheet, pour 2 T. melted butter mixed with 1 clove of crushed garlic onto filet– let rest on salmon about 20 minutes. Cook salmon as above, then after cooking, sprinkle very liberally with brown sugar and sliced green onion. Amazing!!

As for salmon, if I cook it in the cast iron it’s onion and garlic and basil with black pepper and maybe a little curry powder. If it’s wrapped in tin foil in the oven, it’s sesame oil, soy, lemons, basil.

My husband would love the Frito Pie recipe. We had salmon Sunday night. My husband likes a little Yoshida’s drizzled on top after I pull the salmon from under the broiler. 7 minutes under the broiler and done to perfection. Easiest Sunday night dinner in under 10 minutes.

Here is how traditions are made: the first, romantic year you are married, as a joke you give the husband an elaborate cake for Father’s Day, from the dog since you have no children. Thirty seven years later, never any kids but he still looks for the dog to make him an almond pound cake on Father’s Day. (And I am happy to help the dog make it for such a great husband)

The best salmon I ever had in my life was 20 years ago at (I think) Fairbanks Alaska! It was some place where they had how long, long rows of salmon being grilled and tour buses would come there. They used honey and fresh dill. Maybe it was just because was so darned fresh as I’ve never gotten mine to come out as good.
My memory fails me, would anybody know where exactly that might’ve been? If I ever get back to Alaska again, I would make a special trip for that salmon! It was that good!
