We went to a family gathering over the weekend and everyone brought something to share. We brought old fashioned carrot cake bars because they were such a hit the last time we brought them and a new appetizer {which I’ll share tomorrow}.
Any who, when our neighbor asked if we wanted anything from Costco last week so when I gave her my order I also asked for 1 bag of mozzarella balls {for the recipe I was going to make for the gathering}. Well, my husband INSISTED that we would need more and asked her to get 4 BAGS!!! Because what if we run out…. “WE WON’T RUN OUT” I repeatedly told him. But did he believe me? No.
So guess how many bags of mozzarella balls we used? C’mon, guess. ONE BAG.
Oh that man. He makes me crazy. And so now we have a gazillion mozzarella balls to eat by July 23rd {the expiration date}. Go fit win.
I ate 2 hot meals last week. Eggs and weenies for breakfast.
And a hot dog and chips for linner.
After that, the temps hit the mid 80’s and all bets were off for real dinners…
We did manage to stop by our favorite breakfast place to split an early morning bagel and lox one day. But other than that, we pretty much just ate at home.
For five days in a row I ate either chicken or tuna salad {with apples, relish and tomatoes} for lunch and veggie sticks and hummus for dinner.
And had dessert 7 out of 7 days last week. Sometimes I ate dessert for breakfast, and some days I managed to make it until the end of the day.
But when the weather outside is crazy hot, and you don’t have a/c, root beer floats count as a meal anytime of the day in my book.
I think my new favorite dessert though might be Fisher Scones with vanilla ice cream and fresh strawberries. I mean it’s got everything; bread, fruit, dairy …. it’s delicious and it cools you down, what else do you need? 😉

Toss the excess mozzarella in the freezer. Problem solved. I always have some in my freezer. Texture changes a bit for fresh eating but no difference at all when it will be cooked/melted.

I was going to say that too. I plan on using mine in a recipe, if the texture is too weird.

Not a comment on what we have been eating lately, but…I remember a way back that you lamented that lack of Malt O Meal here in the east. Did you see that it is featured and on sale this week at Market Basket? Maybe not what you had in mind, but maybe you could get the HH to check it out.

Mavis, to get around the expiration date, can you freeze the extra packages of mozzarella balls?

You can freeze the mozzarella balls. I keep them on hand all summer. As the garden starts producing I offer my caprese salad for all gatherings. Fresh mozz (from freezer) sliced tomatoes, fresh basil, and any other special “picky bits” you might have on hand to fancy it up. Drizzled with balsamic glaze. A delicious salad that every loves. Summer on a plate.

You can make a capese pizza with the mozzarella balls. Slice them in half or thirds and place them on a pizza crust spread with marinara. Put fresh basil leaves on it right after you pull it from the oven. You can also put sliced tomatoes on it. Drizzle with basaltic if you like. You can also use them in a meatball or Italian sub sandwich.

High desert here. Cool mornings and nights but will hit 102 today. Back down to 89 tomorrow. But low humidity so bearable. And AC necessity !

The mozzarella bales keep waaaay longer than that. They have to put an expiration date on, but it’s cheese so there’s flexibility. Also, it freezes really, really well, as other in the comments have said!

Oh my goodness gal, I love your diet! I would be 300 pounds but thats my problem. It is so hot here in Texas I hate going outside. 90s daily 80s at night currently 70% humidity so it’s not a “dry heat”. Early morning is so humid it’s terrible to walk in. 100s are coming – July and August. I would be delighted in your weather and am seriously thinking of our retirement area NOT being in Texas! Dreaming of the day actually. But I get it, you’re not used to hot weather. My family has lived in New England for 400 years (yep) and I have some great old yankee recipes if you want them. I bet you would enjoy! I love New England but its too cold for me

Mavis, I would like to make you chocolate ice cream recipe. Do you still use your Kitchen Aid ice cream attachment? Is it worth the expense?

yes, and if you make a lot of ice cream I think it’s worth it. We also have the Cuisinart 1.5 Quart Frozen Yogurt Ice cream maker that works great too.

Can I ask…why no a/c in the last two homes? Is this common in the NE? Midwest here, and I grew up with no a/c But that’s because we couldn’t afford it. It’s hot and humid in iowa and I live on gravel. No way are we living with the windows open.

I keep Mozzarella balls for longer than that. All cheese I have around here lives longer than the expiration date.

We’ve been doing drywall around here so dinners are on hold. Did make chicken spaghetti yesterday, since the temps were under 100. We haven’t had our ac on much because of drywall dust, so once it hits 100 inside I don’t cook. We do turn it on a bit at night to make sleeping easier, but I have to thoroughly clean everything so we aren’t sucking the dust into the system, plus, I don’t want it overworking too much to bring the house temps down until we are done. About another week I think before I’m done with the ceilings and walls and can paint. Takes so long since I am the cook and cleaner, too.
Caprese salad sounds fantastic. So does watermelon salad (watermelon, cucumbers, hot jalapeños or habaneros, mozzerella, and a light vinaigrette).
