Last week I bribed The Girl with a free breakfast for her and a friend if she would do our grocery shopping for us and it worked! π She took the bait and headed off to the shops with a big list in hand and I didn’t have to deal with the whole zombie apocalypse thing. It was lovely.
We have totally blown our grocery budget this year and it doesn’t even bother me. It’s not something I choose to worry about because seriously, we haven’t been buying or really going anywhere else this year so hey… why not spend that money on comfort things like food instead?
The Girl found a 10 pound box of frozen chicken breasts for $9.97! What a deal. Those Aidells weenies, have you tried them? The pineapple and bacon are our favorites. And more bacon… you can never have enough bacon.

How do you cleanly peel your hard boiled eggs? Mine take forever to peel and look like the craters on the moon afterwards. I love them and my kids do too, but I have no patience to peel them with small flecks of shell coming off. I will not buy the precooked already peeled ones as I think they are grossly overpriced and I wonder how they peel them.

I give them a whack on the side of the sink and then peel them. π

The newer and fresher the eggs, the more difficult they are to peel. I always try to hard boil eggs after they’ve been in the fridge for a week or so. I also have good luck draining the hot water away and then plunging them into an ice water bath. Let them stay until they are completely cold, then crack and peel. That always seemed like an annoying extra step to me, but it really does help. π

I used to have this problem, and then I broke down and bought one of those egg cookers on Amazon. It cooks them perfectly and peeling is a breeze.

If you have a Instant Pot, they peel super easy after being cooked in there.

I have chickens so my eggs are super fresh. I tried them in the Instant Pot, but still had a bit of trouble. I have found they peel easiest for me by steaming them. I have one of those inexpensive stainless steaming baskets that fits into my 2-qt. saucepan–I can do 6 eggs at a time. I pour in 1c water & steam for 15-20 minutes, then immediately drain & fill the pan with cold water, wait a couple of minutes, drain & fill with cold water again & repeat 1 more time but leave the cold water in the pan & immediately crack the shells & place the eggs back in the water while I crack the other ones. Then I peel & I have perfectly smooth eggs. I will run across one occasionally that gives me a bit of an issue, but that doesn’t happen often.

Our 25th anniversary was this week, and since we couldn’t have a big party with friends and family or even go on a short vacation (just didn’t feel safe), we decided to have some fun and active mini-dates and treat ourselves to take-out every night with the money we would have spent. We had Panera, Blaze pizza, Texas Roadhouse, discovered a new local restaurant that we will definitely return to, Goodwood barbecue, local Mexican place DH loves, and tried a new Cajun fish place. It was lovely to not have to plan, shop, cook, and wash pans this past week! Going back to a regular menu is going to stink, especially once school starts!

This is always my favorite post of the week. I love getting a little peek into what other people eat. By the way, thank you for the chicken salad inspiration. I made chicken salad with costco canned chicken and our last apple and it was soooo yummy.
Those Aidells sausages are so good. We really like them. All versions. I like that most of their things are gluten free, except not the pineapple teriyaki meatballs, which is a total bummer.
I might have to add that cod and the smoked salmon to our next Costco list.
Our grocery budget is blown this year. Blown. So much higher than last year. But then again, we aren’t going anywhere or doing anything. Part of the reason it’s blown is that I’m feeding 2 kids (one a teen boy) who last year was getting free lunch at school (all kids at their schools got free lunch). Part of it is less shopping around, and more ordering extras through our CSAs. Yes, I can get 5 lb of carrots for $3 at the store, but the carrots from the local farm taste a lot better.
We buy tortilla chips at Costco in the 6 bag box. We go through a lot of chips.

I quite literally live on the Kirkland frozen boneless skinless chicken tenders. There is no waste so I don’t mind paying a little extra for them. I used to get the Perdue frozen boneless skinless chicken breasts from Costco but there is no comparison.

Was the marinara sauce on sale or is it awesome and you always buy so many jar? I havenβt tried this sauce yet. Do you doctor the marinara sauce, if yes what do you add?

I think the jars were 2 for $9.99 and they are 28 ounces each vs the 24 ounce jars you can buy at the grocery store. No need to doctor the sauce up. PERFECT they way it is… just like my grandma used to make.

Do you remember the brand of the boxed chicken? Itβs a farm in Georgia if I remember and have been trying to find it for months. This is the closest Iβve gotten to finding it.
