HH: What’s for lunch?
Mavis: I don’t know, what are YOU making?
Turns out… nothing. Well, unless you count the handfuls of peanut M&M’s he handed me to pop in my mouth. Aaaaaaand that’s pretty much how last week’s meals went. π
Summer, it’s meant for snacking, right?
The chocolate ice cream is all gone.
And so is the vanilla.
I used the last of the vanilla ice cream for root beer floats {in my new whale mug my buddy Sue Tirrell made me} and alongside slices of blueberry pie.
The pie is gone too. I ate 5 out of 6 slices {over a period of 3 days}.
There was chicken salad and tuna salad.
And pickety bits.
And yes, Miss Lucy had some too.
According to the HH we are now down to 13 jars of Rao’s pasta sauce. Eeek! I hope that’s enough to last the winter.
The the big meal of the week… was a homemade turkey pot pie {made on a day it was 84 degrees outside thank you very much}. I had to beg a potato off a neighbor {you can’t have a pot pie without potatoes!} and used zucchini and green beans from the garden. The pot pie was delicious.
The best part though was that the pie lasted 3 days and so we didn’t have to cook {it was in the mid 80’s pretty all of last week}. Summer, I’m glad it’s here, but I’ll be happy when fall rolls around and I can get back to wearing jeans and long sleeved t-shirts and meals in the crock pot.

I love that you make pot pie with a top and bottom crust. My HH considers it to be cheating if there is just a top crust! And, yes, I make meals for the family, but I, myself, live on pickety bits! Picking and canning takes up my time!

The pot pie looks heavenly…last week we had a birthday celebration for my DIL who requested hamburgers, hot dogs and appropriate side dishes…so you guessed it, we ate leftover homemade baked beans, potato salad and grilled more burgers and hot dogs for several days. My dad brought me a box of peaches and corn from the field so thatβs been going on as well. I also made the best chicken burrito bowl fixins in my instant pot…could eat it twice per day for days on end.
I bought a ridiculous amount of huckleberries this weekend and Iβve been freezing some plus Iβm making a double batch of jam today…huckleberry season comes but once a year you know…Iβm also making peach jam this week and if my dadβs plums are finally ripe, plum jam will be happening as well. Because of all the canning I have planned, I bought sandwich stuff to get us through the week- BLTs, grilled cheese with fresh tomatoes, ham and Swiss, Reuben sandwiches….you get the idea….sandwich heaven going on this week…

Snack eating makes us ill. We have eaten daily green salads and tons of fruit and veggies for many years and just cannot take it when we eat junky food.

We’ve been eating a lot of pesto pasta, summer salads with corn and cucumbers and tomatoes! I love reading your blog, it makes me so happy! π

My daughter starts her Senior year of high school tomorrow (online), and itβs currently 94 degrees here in Colorado! Hardly feels like school weather. We are ready for cooler temps and crock pot and roasts, too.

I tend to cook either very Southern or Italian in the summer. We’ve been awash in green beans so twice a week I make buttermilk cornbread with a big pot of quartered potatoes and green beans. With my heirloom tomatoes and basil it’s lots of pasta with fresh tomato sauce or pesto, and Caprese salads with artisan bread.

Itβs amazing how weather effects our appetite and tastes! In the photo with your neato whale mug, is that the boat painting you made last week? Beautiful colors! I donβt remember a photo of the entire painting? You are so talented !

Found an amazing pasta βdumpβ dinner. In a Dutch oven put in some olive oil then 12 oz pasta. Add two 14 oz cans of diced tomatoes and two cups of chicken broth. Add four cloves of chopped garlic , one teaspoon of dried oregano and half a slice onion and 1/3 cup fresh basil leaves. Cover and bring to a boil then simmer for 20 minutes until pasta is done. Stir several times to prevent sticking. Stir in fresh spinach and let sit covered for 10 min. Top with grated Parmesan cheese. You could add any other veggies or protein but it was great as is.
