Hello and HAPPY Monday! Today is going to be a flippin’ fantastic day. Want to know why? Later today I’ll be making whoopie pies with my neighbor. And you know, waking up and knowing your day is going to be filled with sugary goodness… that’s what it’s all about folks. π π πΒ Good food, good friends, what else do you need?
I’ve never made whoopie pies before, so hopefully everything goes okay.

In other news, it was another epic week of grocery shopping. We bought ice cream and milk. Yee-haw! I guess when you have a pantry stocked with enough food to survive a zombie apocalypse, you can get away with just buying the basics {or I suppose, you could resort to drinking evaporated milk… but we’re not there yet}.
We were also gifted a jar of salted peanut from a concerned neighbor. Apparently he thinks my glucose levels might be off because I eat so much pie and ice cream and he wanted to make sure I was getting enough protein. FUNNY FUNNY. π He must have read the blog on an off week? Or maybe all I do is talk about baking pies? I dunno.

Oh, that’s funny about your neighbor and the peanuts! I’ve thought the same thing about your food posts Many of the photos show a lot of carbs — grains (bread, buns, crackers, pastries, rice, etc.), sugary foods, and fruit — and one doesn’t have to be overweight to be insulin resistant. The HH has the right idea with meat. (As much as possible, we choose meat from sources where we know the animals are raised and harvested humanely and not too young. We buy mostly from small farms, and never buy veal and lamb.)

My grandmother use to make mock Apple pie. You use Ritz crackers in place of apples. That is one to try, Mavis.

Tell the HH to head to Lowe’s as they have a huge charcoal sale around Labor Day. Last year, they had 2 20# bags of Kingsford for $10 – the price of one most placex. We still have some leftover.

Whoopie pies reminded me of your post about Puzzle Mountain Bakery Pie Stand and their maple cream filled cookies. Did you ever find a recipe for them? You said they were the best cookie you’d had in the last five years and I figured that was high praise! I searched but never found a recipe and since I live near the Texas Gulf Coast I won’t be passing that way soon.

When I used to live in Connecticut, my grandma would make us Whoopi pies when we would visit. I remember thinking they were the best thing ever. Theyβre pretty easy to make, just a little time consuming. Enjoy your baking lesson.
