Pasta is really awesome, especially when you make it with Rao’s homemade marinara sauce. But eating the same pasta three days in a row because your daughter {who is basically a human garbage disposal} doesn’t live with you anymore and so therefore can’t be relied upon to eat all the leftovers… Well, that’s kind of another story.
This whole cooking for two thing… I hope we can get a handle on it soon because eating pasta for breakfast lunch and dinner is kind of silly. On a side note… anyone know where I can get some nice flannel jammies online? I’ve been waiting and waiting for them to go on sale at L.L. Bean but so far, no dice.
Carrot cake jam… have you tried it yet? Word on the street is it prevents scurvy. Okay, so maybe I made the scurvy part up.
Because we are old people now, we split sandwiches. Gone are the days of eating an entire sandwich by ourselves.

Fact: Everything tastes great when it sits on a Ritz.
Spinach stuffed raviolis. The HH liked them, I thought it tasted like I was eating ravioli stuffed with weeds. Maybe it needed more cheese?

Cooking for two took me about two years to nail down and sometimes I just forget and make a vat of something anyway by mistake. Your freezer is your friend. Pasta dishes can be frozen if you thaw completely in the fridge before reheating. Most soups without potatoes can freeze well.

I just made a big batch of tuna casserole on Saturday even though I’m the only one who will eat it. It’s about the only meal I don’t mind eating everyday for a week and I only make it about twice a year.
We are going to have to figure out how to not make too much pasta when our oldest goes to college next fall. She’s addicted and ALWAYS eats the leftovers!

I was on a serious pasta binge 2 weeks ago. Our garden generates a LOT of ratatouille (I’m partial to this recipe: https://www.salon.com/2010/08/07/ratatouille_weapons_grade_style/ )
Also my Mac n’ cheese-love it using smoked Gouda and cheddar.
We had good old fashioned pot roast this past week with carrots/potatoes thrown in the dish for the last 30 minutes. Oh my it was yummy! Hubster “pulled” the remaining roast and it’s in the freezer for future burritos or taco salads.
Spinach quiche has been breakfasts this past week as well.
I’m in full fall cooking mode even though we’re still in the 80s every day!

Our meals have been a little disorganized lately since I did not freezer cook this summer, so I made an effort to step things up this weekend. On Friday, I made crab dip and bruschetta (using our last cherry tomato harvest) and served both with toasts and salad for dinner. Yesterday, I made homemade fettucine and a big pot of bolognese (to freeze).

My Dad loved the Goodfella & Co. pjs from Target. He lived in them almost 24/7 the last few years of his life. I now wear them. Both the spring/summer cotton and the flannels are soooo comfortable, well made and durable. Abt $25-30 a pair.

Best place for warm flannel jammies besides LLBean is the Vermont country store. They have 3 locations; Rockingham, Weston, and the main store in Manchester, Vermont. You can also shop online. They have a lot of items from the past. It’s always fun to stop in one of the store when we’re up in that area of Vermont and waste a few hours. So if your taking a scenic ride to leaf peep stop in.

I bought an instant pot and I’m trying new recipes. So far the chicken teriyaki was great and tonight’s pot roast seams promising. Nothing like a new toy to make me want to try new recipes! Don’t be fooled…instant pot … not instant…but certainly quicker!

Fall is here which means it’s soup and chili time at our house! My best tip for cooking for two is to freeze all your leftovers in one meal units. I have a whole bunch of rectangular Tupperware that I think hold about 2 cups. They stack like bricks in the freezer and one brick is enough for two nice size bowls of chili or soup.

If you think cooking for two is hard, try cooking for one. My husband is gone a year now..and with him . I cooked three meals a day..Im still trying to adjust..my daughter helps when she freezes her leftovers.. Im still working on it..
