Hello Monday. Can you believe it’s already December 21st? I don’t know about you, but I am soooo ready for 2021! Or rather, the summer of 2021 when I think more places will be open and there will be a little more normalcy to life. I’m just thankful I have a bunch of house projects to keep me busy in the interim.
I think I’m going to paint the bright yellow walls in the family room today while the HH works on the tile in the entryway. Or at least get them covered with the first coat of white paint. It’s so much easier to visualize a space when you can start with a clean slate, don’t you agree?
Costco $113.44
The HH was down south running errands and visiting with our old neighbors on Saturday so he swung by Costco for a few items {and not only got every item on my list, but stuck too it! Shocking, right? Not a bag of chips in sight.}.
Remember when we were all couponing and would use double coupons to get Activia yogurt for free? Well, I think the portion sizes have shrunk since then. I’m not a huge fan of yogurt, but I figure I probably have a week or two of eating soft foods in my future so we might as well stock up.
I also had him pick up 3 cases of tomatoes for the copy cat Panera tomato soup I love so much. {And that he made for me again, this past week.}
My husband makes a really good soup… but opening cans are another story. 😉
A gift from our old neighbors {Kiln Guy}.
A few months ago he accidently ordered a case {12 jars!} of peanuts when he only wanted one jar. And ever since then he’s been gifting us peanuts. I think this was the 4th jar!!! We ate 1 jar, gave one to The Girl, stuck a jar in one of Monkey Boy’s packages and now we have another. I don’t know whether to laugh or cry or start making peanut brittle.

We also had meatballs {again}.
And last but not least, I tried out a new bread recipe {that turned out fantastic, so I’ll post the recipe soon}. It was a good week, with lot’s of boring, albeit favorite meals.

I’m not yet ready for Christmas Day but I will be- we are doing a weird Christmas Day dinner with sandwich fixings, salads, veggie tray and fruit tray so everyone (there will be 8 adults) can grab their food and sit socially distant from each other. I told my daughter who is 23 that I’m feeling nostalgic about my childhood so I’m doing a couple of 70s “salads”…Watergate salad for sure…why on earth did women of the 70s think concoctions with marshmallows, pudding mix, and cool whip was a salad???
By the way, I think you will find my husband story a bit funny. I told him we couldn’t make homemade goodies for the 4 neighbors we always take goodies for because of…you know…so I bought four honey gift sets at Trader Joe’s..my husband thinks I’ve lost my mind…he said “who in the world wants 6 jars of different kinds of honey?”…ughh…he did redeem himself by making me nachos for dineer so there’s that…

Honey has a better shelf life than cookies. Tell him that. 🙂 And seriously? Honey is a great gift idea!

We haven’t been able to find steel cut oats in stores for some reason, so we’ve been eating more of the things we normally do for weekend breakfast: apple scones, sausage biscuits, muffins, Danish, etc.
Dinners haven’t been too exciting, but I’ve tried some more interesting side dishes, so we had a Brussels sprout apple walnut salad the other day, and I made potato latkes in our air fryer last night. Both turned out great. I also froze the extra dough when I made Christmas cookies earlier this month, so I’ve been thawing that out a little at a time and making them for dessert.

Mel…you must have a huge freezer! Wish my husband would eat more vegetables, he’s a meat and potato guy, then I would make casseroles, soups, and stews.

We have two chest freezers but typically only use one. We’re using both this year because we’re shopping less frequently and because we switched to buying local meat, but I also usually freeze things with the smallest possible footprint, and cookie dough takes almost no space.
And yeah, my husband loves veggies. I get away with meatless meals about 3 times per week, and he’s been on a real salad kick lately. We went through 4 heads of lettuce, a tub of spinach, and some Brussels sprouts for salads last week, in addition to other veggie sides and putting veggies in things (like vegetable soup and zucchini oatmeal muffins). Even with all that, we can’t eat as many veggies as we did last year when we were able to shop every week.

I went to go pull my duck out of the freezer to start defrosting for our early Christmas dinner and there was a mysterious white trash bag sitting on the shelf in the freezer. I wasn’t sure I wanted to open it and know what was inside….many things went through my mind roadkill, kids experiment, neighbors annoying pet. Anyways, I opened it and it was our Thanksgiving turkey carcass and random cooked turkey bits. I had told my son to put it in the trash in the garage, but apparently he thought the freezer in the garage. I guess I do not use my freezer enough as it has been there nearly four weeks. I had a really good laugh.

Perhaps your son was hoping you’d make turkey stock! I have random bags of chicken bones in our freezer because I save them and make chicken stock after I have a bunch ready to go.

Mavis since your old neighbor gifted you with these peanuts, why not try making homemade peanut butter!
Years ago in our hippie days, we has a salton peanut butter maker. I have found you can make it in a food processor easily. Try adding a little honey and salt. We’re all experimenting these days, try some peanut butter.

Wishing you the best on your surgery ! I had my thyroid removed in 1999 due to papillary thyroid cancer. I was so frightened but the recovery was not bad at all. I ate a grilled cheese sandwich the next day and did not need any pain killers. I received radioactive iodine treatment and have been cancer free since then . Good luck

Have you ever tried the Gazebo brand of Greek salad dressing? A bit pricey but extra good.

I’m so envious that you have dived tomatoes at your Costco! We haven’t had any at ours for months. I don’t know if it’s a supplier issue or no one but me buys them, but I look every time and am always disappointed!

When I had half my thyroid removed in 2003, I could not eat the day before surgery. As soon as I was back in my room after surgery, I wanted food. They did not want to give me food, said I might choke or throw up. I demanded food. They brought me a huge plated of shaved chicken, slivered and tender green beans and something else. I wolfed it down, wonder why someone just stood and watched me. Then, I demanded more food. I ate that. Then, I wanted more! They brought me lunch and I ate it. The doctor said she could not believe I ate food so soon. My throat had been swollen, obviously, because I found it easier to swallow two hours after waking up than the day before. I spent the night in the hospital, eating and eating. I cannot recall having trouble eating anything. But, I am sure I was cognizant of eating things that were not in huge chunks. Maybe this will put your mind at ease about the eating situation.
Have they told you that you cannot be around anyone for a week because of the radiation they will use for you after surgery? My friend sent her children to her mother and her husband stayed with his mother and stayed in a motel.
This is going to be a piece of cake!

I was told by several different Doctors to buy Premier Protein for after my surgeries. They will give you the nutrition you need to heal. You can get it at most grocery stores in a 4 pack also at costco in a large box. Not sure if there is a better brand but I like the chocolate blended with some ice for a chocolate shake/smoothie! I”m pretty much an all natural make your own of everything these days but having a convenient meal replacement was great.
I need to try the Costco salmon. We love salmon but its tough to always run to the store for fresh when you need it.
