I made a batch of these morning glory muffins yesterday and they were so good my husband stood at the kitchen counter and ate 3 of them in a row.
And then because I was stopping by The Duck Lady’s place for a visit, I brought her a few and she gobbled them up right in front of me too.
The moment I came home I had 2 muffins with my tea.
So now I hardly have any muffins left because my husband ate more of them last night and now I’ll need to make another batch today because my original plan was to bake a batch of muffins and freeze them so I’d have something to pull out of the freezer when I felt like having a muffin!!!
Moral of the story– If you plan on making these muffins… make a double batch… because HELLO, they are that good!
And as an added bonus, they’re packed with all sorts of healthy bits of fruity goodness. It’s almost like there’s a dose of nature in every bite. Well, minus the twigs and dirt. 😉

Ingredients
- 2 cups whole wheat flour
- 2 teaspoons ground cinnamon
- 2 teaspoons baking soda
- ½ teaspoons salt
- ½ teaspoon ground ginger
- 3 large eggs at room temperature
- ½ cup light brown sugar
- ½ cup raisins
- ⅓ cup canola oil
- ⅓ cup unsweetened applesauce
- The zest of 1 orange
- ⅓ cup orange juice
- ¼ cup honey
- 1 teaspoon vanilla extract
- 1 apple, cored and chopped
- 2 cups shredded carrots
- ½ cup unsalted pecans or walnuts, chopped
Instructions
Preheat oven to 375 degrees
Lightly grease a muffin tin or line with muffin liners.
Get a medium sized bowl, mix the first 5 ingredients together and set aside.
In a large bowl combine the remaining ingredients and stir together until combined. Slowly stir the flour mixture into the wet mixture just until all the ingredients are combined.
Fill the muffin tins ¾ full with batter and bake for 22 – 25 minutes or until a toothpick inserted in the center of the muffin comes out clean.
This recipe makes about 15- 18 muffins {depending on the size of your muffin tin}.

One of our older kids worked at a coffee shop and brought these home at the end of the day quite often. Our youngest called them meatloaf muffins and that has stuck with them ever since.

Thanks for the recipe, Mavis! I made these this morning. My toddler kept asking for more apple nuttins. My husband saw me add carrots so steered clear. Can’t win them all! We are out of whole wheat flour so I subbed all purpose and switched out the honey for maple syrup. Turned out great!
