Well, I didn’t make a single dent in the 5 dozen eggs that are still sitting in my refrigerator so I highly suspect this week’s meals will be centered around eggs.
I did score some good deals at the grocery store and although our meals this past week weren’t too terribly exciting, they were inexpensive and satisfying so that’s a big win in my book.
Here’s a look at some of the meals we ate last week:
Oatmeal with bananas and maple syrup.
Guacamole. On toast, on crackers and straight out of the bowl. 😉
Nachos with home canned salsa.
Bacon and cabbage. This stuff is the best! Have you tried it yet? If not, you can find the recipe HERE.
I tried a new brown bread recipe {and it turned out fantastic!}.
There was also home canned split pea soup, beef stew and homemade tomato soup as well.
And Saturday night beans with pulled pork.
Now on to the exciting part. 🙂
Maple cream. HOLY COW MAN… This stuff is so good. Basically it’s 100% maple syrup that has been heated, then cooled then whipped. It’s crazy good over toast or pancakes and worth every penny.

When The Kiln Guy and The Chef were here for St. Patrick’s Day, I had mentioned the great deals I had gotten earlier in the week and how I was even able to pick up a jar of one of my favorite Oui brand yogurts as part of the deal.
It was then he mentioned that the Oui brand yogurt was a favorite of his as well and that he had been collecting the little glass jars that the yogurt comes in to use as spice jars.
I didn’t think much about it at first, but then he mentioned that he found some wooden lids that fit the tops of the jars on Amazon… And that got me thinking… If he’s collecting the jars, maybe other people are too.
And so yada yada yada, as soon as they left, I hopped online and sure enough, people are selling their used Oui jars on Etsy and Ebay for MORE than they bought them for {filled with yogurt!!!}.
I thought this was a win-win scenario. I could buy my favorite Vanilla and Peach Oui yogurts and re-sell the jars at a profit.
Seriously, how cool is that!?
So, to make a long story short, as soon as I finish eating the yogurt, I’ll sell the jars and {then subtract the profit after Etsy fees of course} and add the money back into my grocery tally for the year.

I was on vacation last week on Hilton Head Island in South Carolina. I bought a whole Quiche Lorraine at this french bakery – $55 !! It was very good, but what a crazy price for an 8″ round (but very tall) quiche. Tourist land 🙂

I didn’t find any deals, but I did buy egg replacer to try. I got it for allergy reasons, but many of the reviews said people were buying it because egg prices are so high. Meanwhile, we have eggs from our chickens and CSA eggs piling up that we now can’t use.

Scramble the eggs and feed them back to your chickens to cut down on feed costs.

I used to do that! I don’t have the time these days, partly because our new stove takes 20-30 minutes to scramble eggs. Our old stove was 7 minutes. I only have about 15 minutes to cook most nights, so I can’t spend that much time on chicken feed. Our baby is finally sleeping a bit better though, so I’m hoping to transition to doing some meal prep after he goes to sleep at night. I’d give the eggs away, but most of our neighbors have chickens.

Maybe your stove needs recalibrating. (sp) It shouldn’t take that long to scramble eggs unless you are cooking a lot of them.

It’s a brand new stove, and everything else seems normal. It’s just eggs and things that need lower heat for whatever reason. I don’t know if the lower heat settings are just extra low or what.

Bake them in the oven with your next meal. After you get it looked at. The thermostat may need replaced.

It’s perfectly calibrated as far as I can tell, but it takes a long time for some reason. Eggs are the only thing though—it doesn’t seem to take longer to boil water, for example.

I reuse the Oui jars for coins in the car , butter sticks left over from cooking and dressing to take into work for lunch ! I am thinking about maybe making candles and using the jars ?

Maybe make some make ahead meals or desserts that use up some of your eggs? I like to make cookies, ball them, then freeze. My dough recipes usually require eggs.

One thing I love for breakfast is a fritata. You can use some of that Italian sausage you picked up, a little mozzarella, and whatever peppers and onions you want. Cook them up, put into a baking dish, covered with cheese and scrambled eggs, bake until done. I will usually use a dozen eggs in a fritata that will last me all week, just heat and eat.
The other thing I like is using two eggs, scramble, put into pan and cook like an omelet. Use turkey pepperoni and mozzarella cheese, roll up into taquito style and serve.
Last week we had turkey and gouda meatballs, pork chops, chicken parmesan, and pizza. Lunches consisted of my favorite creamy garlic chicken soup and a side of cucumber salad. I didn’t do any shopping again this week, yay me! I will look at the flyer and see if anything good is on sale, though.

My two best deals this past week were country ribs for 1.99 lb. I had an 8.00 off an 8.00 meat purchase for 4 Safeway Just for You rewards so got the ribs for around 3.00. I will get 3 meals from the package plus some leftovers for lunches since there is just hubby and me. I also got a 12 oz. bag of frozen raspberries for free, reg 3.49. I use the 4 rewards for 8.00 off meat often, it is one of the best deals at 2.00 per reward point. We are 15 miles or more from the nearest grocery store so I use mostly Safeway and Fred Meyer (Kroger) for the digital coupons. I also check prices between the two online. Fred Meyers is usually cheaper so I have my daughter go there as she lives next door and goes by there twice a day.

Yum! I discovered Maple Cream when we visited the in-laws in NH. BEST THING EVER!! Especially on breakfast crepes. That would be a great recipe to use up some of those eggs. Or how about quiche? I made a couple crustless ham & broccoli quiche and froze one just to see how it would hold up. It was great!

I love a bacon and egg sandwich. It’s kind of my go to meal lately.Where I live in the midwest groceries are expensive. Very seldom see deals like you and your readers get. I buy most of my groceries at Aldi and what I can’t get there I get at Walmart.

Whenever I have too many eggs, I’ll make some freezer burritos. Eggs, rice, beans, veggies, cheese and whatever else I want to use up from the fridge. Wrap each in foil and stick right back in the burrito ziploc bag and stick in the freezer.
