It was another great week in the grocery spending department. I only spent $11.99 and we made a ton of meals from scratch.
We started the week with leftover beans and a loaf of homemade bread.
I used the spelt flour I picked up from Maine Grains back in December to make the bread and it turned out fantastic. {If you want the recipe let me know, and I’ll post it.}
There was also a homemade chocolate cake!
And some Dutch oven cinnamon raisin bread.
At the start of the week I set out 9 jars on the kitchen counter with plans to open and use up the contents throughout the week.
Last week we emptied:
- 2 Jar of Beef Stew
- 2 Jars Ketchup
- 1 Jar Bruschetta
- 1 Jar of Salsa
- 1 Jar Maple Syrup
- 1 Jar Rhubarb Cinnamon Jam
- 1 Jar Strawberry Jam
- 1 Jar Pickled Asparagus
In the end, we didn’t open the jar of split pea soup but we did open an extra jar of beef stew and an extra jar of ketchup so it was a success.
Here’s a look at most of the meals we ate last week:
Quiche with pickled asparagus, rehydrated tomatoes, cheese and spring onion tops.
Pickety bits with bruschetta.
Oatmeal with jam.
Scones with jam.
Pancakes with homemade maple syrup.
Meatloaf with ketchup baked on top.
Beef stew.
And then there was my favorite Copycat Panera Tomato Soup served in a giant tomato pot that the HH gave to me for my birthday. 🙂
How cool {and thoughtful} was that!?
I feel like the canning cupboard is finally starting to thin out a bit.
I’m hoping that by the end of March, I will have reclaimed an entire shelf and that by the end of June all the 2022 canned items will have been consumed and we can start filling the cupboard up again with new canning creations.
Costco $11.99 {5 dozen eggs}
The big purchase of the week? 5 dozen eggs for $11.99. Finally, egg prices are starting to come down to a more reasonable price.

Our Costco just recently dropped those eggs from 15.99 to 14.99. Your price is great! It’s interesting to see how Costco’s prices vary by region.

Great price on eggs, here is a recipe for dehydrating them. I have made them and they came out great, after they were dried I put the in the blender to turn them to powder and I store them in a glass jar with a moisture packet in.
Method
Crack eggs into a bowl. …
Whisk the eggs very well, until fully blended and a little foamy.
Pour the eggs carefully into the fruit leather tray of the dehydrator, ensuring that the dehydrator is placed on a level surface.
Dehydrate eggs for 8-10 hours at 140 degrees, until fully dried and flaky.
What do you use dehydrated eggs for?
Dehydrated eggs can be used in any recipe that you would normally use eggs in. You can enjoy them scrambled, as an omelet, in a casserole or use them in your baked goods, such as bread and cakes. When using your dried eggs, use this formula to figure out how much water and egg powder you will need for your recipe.

Happy Birthday! The tomato pot and cake are fabulous.
I have a carmamelized onion recipe for you. Not mine but found it on the internet when I had a glut of onions. Slice, dice or chunk a crockpot full of onions add a little water to keep onions from sticking or better yet add about 1/4 cup of balsamic and or Worcestershire sauce. I use a combo of both. Caramelise your onions on low for 4 to 6 hours. Drain and dehydrate. The flavoured onions add a sweet/salty profile. Really good in soups or stews but we like them best as a crunchy topping.

I spent another $60 this week. My biggest buy was packets of tuna, on sale for $0.99 each. I grabbed a couple dozen, as my brother loves tuna salad and tuna melts. I grabbed red onions, red grapes, a rotisserie chicken, bacon-wrapped pork medallions, celery, carrots, acorn squash, spaghetti squash, lettuce and light dressing. From my mother’s freezer, I grabbed beef soup bones to make a nice ragu to put on the spaghetti squash. I’ll stuff the acorn squash with Jimmy Dean’s breakfast sausage. The chicken will be used to make both soup and chicken salad for lunches.

I made the no-knead cinnamon raisin bread last week, and it turned out so good! My daughter couldn’t eat it though, because she just got braces and the crust was too hard for her.

When my son’s braces are bothering him and he eats bread, he just eats the soft center. That might help your daughter. I also bought Arnica Montana tablets to help with the pain (instead of Motrin), and that’s been helping him, as well. Maybe those tips could help for your daughter. 🙂

They have a TON of Clearance products right now. Mostly items from the holidays.
I got:
Large cans of Libby Pumpkin for .49 each (bought 8)
2 lb .bags of either light brown/ dark brown sugar- .49 (bought 4)
Confectioners sugar – 2 lb. – .49 (bought 4)
Ocean Spray cranberry sauce- jellied or whole berry- .49 (i bought 6)
Glass jars of gravy (name brand- didn’t pay attention b/c I don’t buy jarred gravy) .49
2 lb. bags of GM all purpose flour- .49 (bought 2)
Ball canning jars- pints and quarts- Half price- bought 4 – 12 packs
Also have rings, lids and other canning products for half price
I am set for holiday items for the next 2 years. The best buy dates are all to the end of 2024
They have a LOT of these items out! Ive been checking every couple of days b/c they add new things daily!!
