Who out there has packed on a few extra pounds these past few weeks? I stepped on the scale yesterday and saw that I had gained three pounds. A W E S O M E. I immediately told myself I would do better. Eat less and not pick up my fork as much.
And then the HH and I went on a 5 mile walk and when we got back home I was hungry and craving something sweet so I made a mixed berry pie. And then I had a slice. And then remembered what I had told myself earlier in the morning and was like… tomorrow. Tomorrow I will start eating better. But then I was like… wait a minute, THE PIE, who is going to eat the berry pie if I don’t?Β
So then it was okay, after the pie is gone {I can usually polish off an entire pie in 3 days}. But by then it will be Easter, and this year we were planning to go all out with the side dishes and so now that whole put my fork down and eat less thing has been pushed back until Monday, April 13th. π π π
Life. Sometimes you just have to throw you arms up in the air and eat everything in sight. And sometimes you’ve got to button your pants. It’s a fine line to navigate people… a fine line.
Anywho, I don’t know what you have on hand, or plan on making this weekend, but in case you need some ideas, here is a list of 12 of my favorite side dish, dessert, and leftover recipes that would be perfect if you are serving ham this Easter.
Have a wonderful weekend everyone,

Leftover Ham Recipes
My hands down all time favorite recipe for leftover ham is Split Pea and Ham Soup. It tastes good, you can make it in the Crock pot and you can freeze the leftovers.

Two thumbs up for the upside down pear gingerbread cake!!!! I ended up with some canned pears earlier in the week, and I used them to make one of these. It is amazing, and it goes great with an afternoon cup of tea!

Thanks for the recipe suggestion earlier this week for the chicken chili. I was so happy to finally have a recipe for the canned chicken. So easy and yummy. My pandemic mission is to use what I have on hand so this was perfect.

Mavis…..itβs time for you to think about putting a recipe and possibly a home gardening book. Not a suggestion, itβs time.

Mavis –
I was actually able to make a difference today even though I am just one person. I give the thanks to you and your blog. I took a beautiful mountain drive because I heard the bakery up there was going to try and make a go it it this weekend.
I took the dogs and when I got there they had pie! I bought one strawberry/rhubarb and one peach. I bought a pastry to eat for lunch with hot decaff Stash Earl grey she had in a thermos. I sat our in a meadow in the mountain sunshine.
I also bought a mineral detox soap that the owner was just cutting into pieces. It smells like lavender. I bought two jars of local honey.
When I came back to town I left one pie for the local postie and gave one jar of honey to my elderly neighbors. It is a gorgeous day here in Eastern OR. I saw lots of people smile. Happy Easter weekend!
I’m not weighing until Monday. LOL. I have been getting some killer workouts in the garden. I read a tip that if you work your body that hard, besides for taking an Epsom salt bath, stretch for 10 -15 minutes before bed and you won’t have much pain. π This works.

I needed a break from cooking at home. I asked my kids to think about a small business who could really use our family’s order to help them out. They chose pizza — no surprise. We went to our favorite hometown pizza shop and got takeout. There was NO ONE else there — so sad! Might need to make this a weekly tradition, even though we don’t usually go out to eat very often anymore. Thanks for encouraging your readers to continue to support small businesses!
