Happy St. Patrick’s Day from the Cliffs of Moher. Okay, so we’re not there right now {oh how I wish} but we did visit in 2009 with the kids and had a great time. We’ve been there twice actually, and have fond memories of staying at Brambury’s guest house in Dingle both times and have plans to visit together again at some point.
Family vacations are the best vacations {especially ones that revolve around food} if you ask me!
St. Patrick’s Day at our house is a major holiday with the HH being Irish and all so today we’re both taking the day off from work. My sweet husband will be cooking up a feast and so I’m pretty excited about that.
I’m not exactly sure what he has planned but I thought I’d share some of our favorite recipes with you today.
Guinness Beef Stew – We first had this at the Guinness store house in Dublin, Ireland and have been making our version of it ever since.
Irish Soda Bread – I’ve made a lot of different soda breads over the years and this recipe is still my favorite.
Colcannon – A popular side dish in Ireland of basically mashed potatoes and cabbage. It’s filling and makes for great leftovers the next day too.
Fried bacon and cabbage – Absolutely splendid! The HH came home with a giant head of cabbage yesterday and there is a pound of bacon thawing in the fridge so my guess is, fried cabbage and bacon are on the menu for tonight’s festivities. 🙂
While a little time consuming to make, if you’ve got little ones at home or you homeschool and are looking for a fun “art” project for today, rainbow Jell-O on St. Patrick’s Day was always a hit with our kids. You can find the recipe HERE.

The Secret of Roan Inish is another wonderful Irish movie. It’ll make you want to live in a stone cottage off the coast of Ireland!

I remember watching Waking Ned Devine in the movie theater and absolutely loving it. However, when I had my kids watch it this year, it was much more melancholy and bitter (and odd) than I had remembered.

I will have to try your Irish soda bread recipe. I bought a loaf at a local bakery yesterday, and paid a pretty penny. This one has raisins in it, which I wasn’t expecting. It is delicious, however.
We are planning our trip to Ireland. What other accommodations have you stayed in that you would recommend? We plan a night or two in Dublin, a couple nights in Dingle Town, and would like to stay a couple places in between.

Oh it’s corned beef cooked with cabbage carrots and potatoes. YUM fried cabbage and onions with bacon is a staple at our house.

Does Scots Irish count? We are having pork cutlet because it needs cooking, cabbage because two heads needed cooking, and leftover carrots and zucchini baked with chicken last night.
