Zucchini Relish: I’ve been using this zucchini relish recipe for years and the funny thing is, you can’t even tell you’re eating zucchini. It really does taste like regular relish. We like to use it on hot dogs, hamburger and mixed in with potato salad. It’s delicious!

I grew up with lots of zucchini dishes in the summer that I was at best ambivalent about (like many of you!). The one my family of teenagers and I love is Ina Garten’s vegetable tian. I just made it last night in fact. It comes together very fast, but is so pretty. I enjoy counting my slices of tomatoes, potatoes and zucchini to make them even (and who cares it they’re not). I had quite a few zucchini this year, and I grated then froze it in half cup servings. My favorite recipe for zucchini is chocolate zucchini muffins (which are probably more like cupcakes, but we define muffins as having no icing so it sounds healthier). I see lots of muffins in our future. Today, I’m going to make zucchini and potato fritters for lunch. And I think I’m going to try your zucchini scone recipe really soon. Sounds delicious!

Zucchini coconut loaf is a go-to in my kitchen. I came across a recipe for zucchini “pineapple” the other day and will give it a try. I use crushed pineapple in my favorite carrot pineapple muffins.
