Nutella Banana Nut Bread — You know when people talk about what they’d grab if their house was on fire and they only had a few seconds? I’d grab the usual: Lucy, pictures and Nutella. What? Nutella’s not on your list? Well clearly it should be. I’d be lost without it. It’s like my sidekick lately. I can’t get enough of it.
Lucky for you guys, because that means it’s been popping up in all sorts of fun Nutella-filled recipes. Yum.

Ingredients
2 cups flour
1/2 cup shredded coconut
3/4 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 overripe bananas, mashed
1/4 cup yogurt or vanilla pudding
2 large eggs, lightly beaten
6 teaspoons butter, melted and cooled
1 teaspoon vanilla extract
1/2 cup or chopped walnuts {optional}
1/2 cup Nutella, melted
Directions
Preheat oven to 350 F. Thoroughly butter a large loaf pan and then dust with flour {you can use 3 small loaf pans instead}, knocking all sides and dumping out loose flour.
In a medium mixing bowl, combine first 5 ingredients and set aside. In a separate bowl or stand mixer, combine the next 5 ingredients up to the nuts. Add wet and dry ingredients and stir just until combined. Fold in nuts.
Spread batter evenly in prepared pan. Drizzle Nutella on top of the batter, and then use a knife to swirl Nutella into the batter. Bake until a toothpick inserted into the center comes out clean, about 50-55 minutes. Let cool for a few minutes and then remove from pan to cool completely on wire racks. Enjoy.

It’s the only thing that is on my daughter’s birthday list every year. I’m going to do a birthday cake, and some sort of cookie dessert as well that has Nutella in it. I love it too, don’t get me wrong, but if it’s around me, might as well call it gone. So I try not to buy it. Try.

Just want to say that I have been making this recipe for 5+ years and it is still the absolute best banana bread recipe I’ve ever tried. I use greek vanilla yogurt and it works wonderfully. Have also made with walnuts or pecans, both are yummy.
