Cookies for breakfast? Oh heck ya! These oatmeal cookies have eggs, oatmeal, apricots and nuts in them. Sounds like a pretty good breakfast to me. Grab a few of these babies and a cup of tea {or coffee} and you’ll power through your morning.
Cookies. The breakfast of champions.
Ingredients
1 cup butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla extract
3 cups rolled oats {I used regular but you can also use quick}
1 1/2 cups all purpose flour
1 teaspoon baking soda {15 Cool Uses for Baking Soda}
1 teaspoon baking powder
3/4 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup dried fruit, chopped {I used apricots}
1/2 cup nuts, chopped {I used walnuts}
1/2 cup chocolate chips
Directions
Preheat oven to 350 degrees.
In a large bowl cream together the butter and sugars. Add the eggs and the vanilla. Stir until nice and smooth. Set aside.
In another bowl combine the oats, flour, baking powder, baking soda, spices and salt. Slowly add the dry mixture into the wet and stir until just combined. Fold in the dried fruit, nuts and chocolate chips. Chill dough for 30 minutes.
Using a 2 tablespoon cookie scoop, drop cookie dough on to a lined cookie sheet {I use silpats} and bake for 11-13 minutes until the cookies are lightly browned. If you like cookies on the crisp side add another minute or two.
Remove the cookies from the oven and cool on a wire rack before placing then in an airtight container.
This recipe makes 3 dozen cookies.

Yum! I make a breakfast oatmeal cookie, but instead of chocolate & apricot (never thought of that before!) I use apples, cheddar (or colby) cheese, and raisins…they are SOOO good.

I made these with a few extra goodies thrown in and they were delicious – I already ate 2 this morning. Oops. BUT the ingredient list doesn’t mention the baking powder where the instructions says to mix it in with the dry ingredients. I went ahead and put in 1 teaspoon. Is that about right? Thanks for sharing it – I love oatmeal cookies for breakfast!

Mom just got out of the hospital and has no appetite but when I read this recipe to her, she said “OK, now those sound good!” So, now I’m off to the store to grab the ingredients and get mom to eating! I’m going to use whole wheat flour for the fiber she needs….

I had leftover “infused rum fruitcake blend” dried fruit from making fruitcake. I used it in this recipe-about 1.5 cups worth plus 1 cup of pecans. No chocolate. Yum! The slight taste of rum was still there.
