Can’t wait to see the Santa rug!
This weekend I need to prep food for Thanksgiving. I’m going to make all the remaining dishes that can be frozen so that they’re ready to go (I already have mashed potatoes, applesauce, and apple pie frozen). My game plan might change, but for now I’m planning to freeze:
-meatballs and sauce
-bread and rolls (bread is for leftover turkey sandwiches, rolls are for dinner)
-cranberry sauce
-ginger ice cream
-sweet potato casserole
-bechamel sauce for mac and cheese
-sweet potato pie filling
If I do all that, all I need to prep the week of will be fresh appetizers (veggies and dip, cheese and crackers, etc.), stuffing, pecan bars, gravy, and a salad (my husband handles the turkey). Technically I could freeze the stuffing, but I forgot to get buttermilk to make cornbread (powdered buttermilk doesn’t work well as well in cornbread).

No problem! It’s not bad–just different, so it will work if you don’t have an alternative. I’m just feeling sort of particular. It may also depend on the recipe–I use Pioneer Woman’s Skillet Cornbread recipe.

We do have two freezers, and both are VERY full right now, mostly because I still need to deal with 60 lbs of tomatoes in there. But I’m also making a 3-person Thanksgiving dinner, so it’s smaller dishes. And doing things like freezing the mac n cheese sauce without the noodles really saves space.
I don’t know about the energy! I’m actually anticipating a real energy crash in the next couple weeks, so I’m basically making Thanksgiving dinner ahead so that my husband could get everything on the table with minimal effort if I don’t feel like it. That’s the real beauty of freezer meals—anyone can put dinner on the table in a pinch!

No, Thanksgiving is just me, my husband, and my father. It sounds like a lot, but I’m making very small batches of things. So, the sweet potato casserole is in a 6″ dish, not a 9×13. The macaroni and cheese is a half batch in an 8″ pan. I’m making a full-sized sweet potato pie (largely out of laziness), but the other desserts are mini versions. We really like Thanksgiving leftovers (my husband really wants a turkey-cranberry Monte Cristo), and we pack up leftovers for my dad as well.
We do have quite a spread of appetizers, but that’s basically lunch/snacks prior to Thanksgiving dinner, so it’s almost a separate meal. And it’s a nice insurance policy against a turkey that cooks slower than expected since we can just keep snacking.

1) finish laundry
2) finish crocheting doll blanket & pillow sets
3) get new items listed on Etsy
4) take granddaughter to the fair
5) collapse exhausted into recliner (after being at the fair)!

I just did the grocery shopping and am planning to do some cooking for the freezer. Fire cracker chicken meatballs, breakfast sausage. Banana muffins. I also need to look at the budget and figure out how we are going to pay to replace my dds transmission.

I had sort of a list and feel like I accomplished a lot today. Made a new vegan loaf for dinner tonight as a test run to see if it will be good for my vegan Thanksgiving guests. It’s called Hippie Loaf. LOL. Made my sweet potato, cranberry, apple dish and froze it. Watered all my indoor plants. Made a weeks worth of egg-free “chaffles” to use as bread (allergic to wheat and to eggs). Pulled up the last of the pole beans for compost. Went and picked up my wine membership order and had complimentary pairings of appetizers with the wines in my order. Was yum. Dropped donations at the thrift store.
Only 2 pm and I am sitting down with tea.

I worked on a wildlife restoration project with Georgia Audubon earlier today. Tonight the grandkids are spending the night. Good times 🙂
