- Draw out new snowman rug

- Go to bed early

I’m making cornbread so it will be nice and stale in time to make stuffing next week (I usually let it sit for a couple days and then pop it in a low oven to make sure it’s fully dried out). I still need to make (microwaveable) cranberry sauce, pecan bars, and a salad, but other than that, I think we’re pretty much set on food.
I’m also cleaning up the house in preparation for our first house guest since pre-pandemic times, which includes catching up on some major laundry folding, cleaning the guest bath, dusting, and changing sheets. I’m off work all next week, so I’m going to do a bit of prep and cleaning each day until Thanksgiving.

Mel, what recipe do you use for your cornbread?

We don’t have a cast iron skillet, so I use a regular cake pan. I heat it in the oven with the shortening in it for about 5 minutes before pouring the batter in. Then I just put it in the oven instead of cooking on the stovetop first. I think you could probably add sugar if you wanted it to be sweet, but we prefer unsweetened, especially for stuffing.

Today’s List:
1) Finish laundry
2) Start cleaning out guest room closet and get rid of stuff!
3) Make room in granddaughter’s bedroom (which was the guest room)
4) Create sale on Etsy for Black Friday
5) Make chicken tenders for dinner
6) Plan rearranging bedroom with granddaughter to make it more “her room” instead of “guest room”.
