I just made chocolate chip Greek yogurt muffins (from frozen batter), and I am now going to attempt to sew a high school graduation present for a friend’s daughter.

Muffins from frozen batter? Do tell! Can one freeze any kind of muffin batter?

Pretty much. You can do it with cake batter too. I sometimes add a bit of extra baking powder, but you don’t really need it. Just mix the batter and freeze either in muffin cups or just a container. You can thaw first (in the fridge, overnight) or just bake the cups from frozen (adding a minute or two to the bake time).
It also works with scones (shaped and cut but unbaked). Bake directly from frozen and either stack two pans or use several layers of parchment to prevent over-browning.

Today I plan to have hubby help me set up the greenhouse that I bought to start my seeds in, sort through at least one box of crafting stuff and help my seven year old granddaughter start a quilt for her baby doll.

I’m off to Quebec City from LAX,CA. It is 77 here-and 12 there…hmmm. Should be fun flying Internationally ( kinda) with this crazy Corona virus scare.
