Work clearing the boarders of our land of invasive plants and paint (another) room! Oh, and make spruce jelly if there is time.

Spruce jelly sounds wonderful. So many questions!! Do you use just the tender new shoots? Do you have a recipe that could be shared? What do you use it on/with? Thank you

Hi Holly! We used this recipe – https://www.pbs.org/food/kitchen-vignettes/spruce-tip-jelly/ – and yes, just the new tips. This morning we put it on biscuits and we will have some with ice cream later. We also make spruce tip syrups for cocktails and to mix with seltzer water.

Today’s Agenda:
1) take photos of newly completed items for Etsy
2) upload photos and create listings for new items
3) wait for daughter to arrive for visit (she is driving 300 miles)
4) enjoy the rest of the day with family

I’ve planted out some Kabocha Squash that I started and checked in on the garden after the rain (finally). I have some lilac cordial started in the cooler that I should bottle. The tender spruce tips are just popping out – so it might be time to make some spruce salt (delicious on potatoes and salmon). This afternoon we’ll start a nice, small bonfire to clear more storm debris and to celebrate Beltane. Oh, and we still have 2 1/2 dump truck loads of chips to move.

I’m experimenting with my solar oven. Today I baked “no-knead bread” in it. If I could, I’d attach a picture.
