Looking for a way to use up some of those tomatoes and turn them into a freezer meal you can enjoy later? Check out my recipe for Spinach Lasagna Rolls. All you have to do is pull the pan out of the freezer, thaw and bake!
And last but not least, check out this cool tutorial on How to Make a Tomato Pin Cushion. I made these last year and sold them on Etsy and they sold out quick!

Mavis, you could make a tostada with beans on the bottom and shredded brussels sprouts as the “lettuce” on top. You could even use some of your tomatoes! (Did you plant cilantro?) You have a lovely weekend on tap! 🙂

Need to do today:
1) List 4 new items on Etsy
2) Take granddaughter for horseback riding lesson
3) Finish laundry (wash, dry and put away)
4) Work on doll blanket
5) Continue scanning photos (for future photo book)
I thought things would slow down when I retired . . . ha ha ha

Mavis your tomato jam recipe came out a day darn late. The one I used called for worcestetrshire sauce and a hot pepper. It’s to sweet/not hot enough to be truly savory. But savory enough that it doesn’t read wow this would be great jam for morning toast. It’s confused lol.
We’re having a large taco party today so I’m able to use my glut of toms for pico/salsa/ marinated cherries/ red rice and a tomato vinaigrette. I roast extras in my air fryer before freezing them. When I have enough…let the canning begin.
Does anyone have another go to recipes for tomato season?

I just spent two hours cleaning up the tomato beds (lots of heavy rain made a real mess), and now I need to clean up the house, do some laundry, and bake some muffins. I also need to make a massive batch of pesto to freeze so I can switch out the basil for flowers, and I need to freeze some tamale pies as well. We’ll see if I actually get to all that though.

Roasted Brussels sprouts are delicious with anything, even retried beans. They caramelize deliciously! Also delicious raw and shredded as previously mentioned! Your tomatoes look scrumptious. Enjoy!

A day late, but when I read your comment about what goes with refried beans and Brussels sprouts, my first thought was “Beano”! JK, I love them both!
