On the list for this weekend:
- Sleep in {done!}
- Pack up orders and ship them on out
- Pick tomatoes and zucchini {and do something with them!}
- Continue working on my latest pumpkin rug
- Collect seaweed for the lasagna garden
- Do a little laundry

Today I will try to:
1) get the laundry done (was on vacation this past week)
2) take granddaughter to horseback riding lesson
3) cut up the 6 bell peppers and freeze
4) fill out the paperwork so that my granddaughter can try out for the volleyball team
5) list new items on Etsy
6) work on doll blanket

This is what I do with an abundance from the garden. It’s a great soup/stew, pasta sauce-I use it in my lasagna too. And it’s a great chili base. All packed with a punch of fresh veggie goodness. I usually do a triple batch in my 11 quart stockpot. It’s a 6 hour job regardless of batch size so why not! It’s the bomb

it’s raining in the PNW (hasn’t happened for over 60 days) so I don’t need to water the garden today.
– driving kiddo to swim meet
– find my documents so I can apply for an Enhanced Drivers license because someday we’ll be able to travel again, and the process to get this/my passport renewed is months long!

At first I thought you posted that you were applying for an “enchanted” drivers license. Ha Ha Ha. I immediately thought “I’d like one of those too!

I spent the morning harvesting cucumbers and tomatoes, and this afternoon I am making marinara sauce to be frozen in quart-sized bags. Dinner tonight is tomato sandwiches and pasta salad (made yesterday). All the pickles I have made with the cucumber harvest has me needing a break from canning, so that is why I am freezing tomato sauce today. I think tomorrow I will need to can peppers (jalapeno and Hungarian Hot Wax).

*Picked beans and got them into the freezer
*Weeded and cleaned up the tomato bed
*Laundry day. We had a lot of pool visitors this week so there’s a big load of towels
*Need to water the seeds I planted yesterday… will do that when it cools down
*Played several games of Uno with my grandson
*Take a nap

What can you do with a BIG harvest of summer squash and zucchini?. Mine has always died out way before now. My neighbors now have all the squash they can handle! I looked it up online and it says that since 1980 they haven’t advised canning it. I just can’t throw out good food. Last year the pictures of FL farmers plowing under hundreds of thousands of tomatoes broke my heart

You can also freeze it. You can either just grate it and freeze it to use in recipes later, or you can prepare recipes and freeze. I freeze the raw batter for these and then thaw and bake:

Your neighbors might also be willing to accept more if it comes in the form of baked goods.

I dehydrated my zucchini and then ran it through the blender to make a powder. 1 Tb powder + 1 cup water = 1 cup fresh zucchini in baked goods. It is also a good thickening agent in soups and stews.
Mock apple pie (zucchini instead of apples)- this is delicious.
I also make cream of zucchini soup and freeze it for winter. Very good on a cold day with fresh bread.
