Why have I never thought to use smashed up bananas in my granola before? Well add this to the list of things you can make from all those spotted bananas that somehow creep onto our countertops. 🙂
I mean I LOVE me some granola, so it was no surprise that I loved this {adapted} recipe for peanut butter granola from Food in Jars. It’s a new healthy twist on granola that I can’t seem to get enough of.
Ingredients
1/4 cup peanut butter
1/2 cup honey
2 overripe bananas, smashed
1/2 teaspoon cinnamon
4 cups oats
1 cup sliced almonds
1/2 cup pumpkin or sunflower seeds
Preheat oven to 350 F. In a medium saucepan over medium-high heat, bring peanut butter and honey to a boil. Whisk in bananas and cinnamon. In a large mixing bowl, stir oats, almonds and seeds together. Pour peanut butter mixture over oat mixture and stir until well combined.
Spread out on a cookie sheet {I lined mine with a Silpat} and bake for 30 minutes, stirring often. Try your best not to eat the entire pan right when it comes out of the oven. Sharing is caring after all!

I just made this and love it! It was my first time making homemade granola and I’ll definitely be doing it again. Because I always want chocolate (and was out of chips), I added a teaspoon (ish) of cocoa powder. So good!
