My neighbor Hulda and I were sitting in the stands last week watching our kids when all the sudden she pulled out a little snack sized baggie with two peanut butter protein balls in it. Knowing how much I LOVE chocolate she offered me one and OH MY WORD I’m so glad she did.
These peanut butter protein balls are flippin’ delicious!! Um, and incredibly easy to make as well. So easy in fact Β that I rushed home and made a batch {and gobbled 4 of them down}.
And you know what? The HH and kids love them too. π So if you are looking for something different to pack in your kids lunch this week, give these peanut butter protein balls a try.
Ingredients
1 cup Quick Oats
1/2 cup ground flax seed {I used Bob’s Red Mill brand}
1/2 cup Peanut Butter
1/2 cup Mini Chocolate Chips
1/3 cup Honey
1 teaspoon Pure Vanilla Extract
Directions
Mix all the ingredients together in a bowl. Using a 1 tablespoon cookie scoop, scoop the balls of dough on to a lined cookie sheet and roll them into perfect little balls of goodness.
Chill in the refrigerator 1 hour to set before eating {or packing in baggies}. Makes 36 peanut butter power balls.

Yummm!!! So, how many should I eat if I am eating them in place of my daily protein shake? I drink one everyday before exercising, but some days… I just don’t want ANOTHER frickin’ shake! LOL!

ive been making these for years, they really are wonderful and provide great energy. Everyone I have offered these too loves in fact my sons teachers barter with me for them and my salsa and one of my friends buys the stuff to make different versions of them every few weeks for me to make for her π

I make something similar. I use cinnamon in place of vanilla and I like to add coconut oil, raisins, etc. Lately I’ve been using maple syrup in place of honey because my honey keeps crystallizing.

These also keep great in the freezer after they’ve chilled in the fridge. If you’re like me and would eat way too many of these babies at once, keeping them in the freezer lets me take out the few that I need, and they thaw in just a few minutes.

I have made 3 batches of these and they just do not last in our house. And I have no reason to tell the boys they can not eat them. Well, other than I want to keep them to myself!

I made these using crunchy peanut butter and the mixture was just barely sticky enough to form balls. I think creamy peanut butter is better for this recipe. They tasted pretty good.
