Just finished night two of canning pear butter. We did 60 lbs of pears this year. I omit the sugar and water (our pears were very juicy). I also peel and core as we like our chunky. This is my boys favorite breakfast topping (most of our breakfast are Mavis recipes too!). We are eating oatmeal zucchini waffles today. Thanks for all the great recipes! My cookbook is full of them.

Pear sauce (like the more common applesauce) is good too, with a tiny bit of almond flavor or cinnamon & ginger for the spiced versions.

Before I say what I want to say here, let me just state that I love Amazon as well. The service is amazing! However as a FYI, it is beginning to get the same reputation as Wal-Mart. Amazon always puts the customer first at the expense of the employee. They apparently have a Big Brother system in their warehouses in which they put a tracking device on every employee, watch their every move, allow a certain number of bathroom breaks and will pull an employee aside to question them if they use a restroom that is not closest to their work station, continually increase the quota for each employee until they reach a level the employee can’t possibly meet then fire them, and routinely work them up to 15 hours at a time. They are also increasingly being the cause of the closing of many small businesses just as Wal-Mart has been. Now, unfortunately I think the age of the brick-and-mortar store is on the way out anyway as more and more of us buy more and more on line, but it is still sad to see the small businesses on cute main streets disappearing. At some point there will be nothing left but restaurants and other service-oriented establishments. Again, I love how amazon treats its customers, but it comes at a price.
