If you’re looking for a last minute appetizer to make for your New Year’s festivities {or really, any time of year} this pistachio cherry goat cheese log is not only a total winner, but it will take you all of 5 minutes to make.
Whip one up for a hostess gift, or lock yourself in the closet with a sleeve of crackers and hoard it all for yourself, just MAKE THIS!!!
I made this recipe with a couple of goat cheese logs from Costco and a bag of Chukar Cherries mix I received in a Christmas gift basket but really, any log of plain goat cheese and fruit/nut combo will do.
We LOVED this recipe, and I know you will too.

PrintPistachio Cherry Goat Cheese Log
Ingredients
{2} 10.5 ounce goat cheese logs
½ cup pistachios, finely chopped
½ cup dried cherries, finely chopped
⅛ teaspoon sea salt
Instructions
Remove goat cheese from the refrigerator and let sit at room temperature for 20 minutes to soften.
Mix the chopped pistachios and chopped cherries with sea salt.
Place a piece of plastic wrap {large enough to wrap the goat cheese log in} on the counter and spoon out half of the mixture {½ cup} onto the plastic wrap in a long strip.
Carefully roll the log of goat cheese in the mixture until evenly coated.
Wrap the coated log in plastic wrap and refrigerate until ready to serve.
This recipe will make 2 pistachio cherry goat cheese logs.
