If you have an extra pumpkin {or pumpkin puree for that matter} then you’ll want to whip up a batch of this pumpkin pie steal cut oatmeal for breakfast real soon. Yep, it’s time to sleep in and let your boyfriend {Mr. Crock Pot} cook breakfast for you. Ahh fall, don’t you love it?
Ingredients
1 1/2 cups milk {I used 2% milk}
1 1/2 cups water
1 cup uncooked steel-cut oats {I love Bob’s Steel Cut Oats}
1/4 cup maple syrup
3/4 cup unsweetened pumpkin puree {how to make pumpkin puree}
1/2 cup applesauce
1 teaspoon vanilla
1 tablespoons pumpkin pie spice {pumpkin pie spice recipe}
1/4 teaspoon salt
Directions
Coat the inside of your slow cooker with butter {or cooking spray}.
Place all ingredients in a slow cooker and cook on low for 7 hours or high for 4 hours.
If you want to make steel cut oats but don’t have a slow cooker, simply place all your ingredients in a large sauce pan and simmer for about 45 minutes, stirring occasionally to make sure it doesn’t stick to the bottom of the pan. Serve with extra milk if desired.

Same recipie but with PEACHES is to die for…. lay sliced peaches in the bottom of the crockpot, sprinkle with cinnamon & brown sugar. Put oats on top, then milk & water on top of that – DO NOT STIR. Cover and cook (I do mine overnight). YUMMMMMMMMMMMM

I made a similar recipe this weekend. I used a plug in light timer (the kind to make your lamps come on or off at different times) so I didn’t have to stay up late just to turn it on. Worked great. I’ll try this recipe next time I have some left over pumpkin.

Hi Mavis, I haven’t made any pumpkin puree yet . Next growing season pumpkin pie pumpkins is the first on my list. I use pumpkin so much for pies and pumpkin rolls.
