If you still have a bag of quinoa in your pantry and you don’t know what to do with it, this recipe for quinoa salad with broccoli, garbanzo beans and cranberries turned out pretty awesome if I do say so myself.
I’m still not sure what I’m going to do with all the free broccoli from Mr. Produce Guy saved for me, but this recipe was a good start.
Not only does it taste great, but it also has a lot of protein too.
Ingredients
2 tablespoons olive oil
2 cups broccoli florets, chopped
2 cups water
1 cup quinoa
1 {15 oz} can garbanzo beans, drained
1/2 cup dried cranberries
1 tablespoon lime juice
1 teaspoon cumin powder
1/2 teaspoon kosher salt
Directions
Place the quinoa, water, cranberries, cumin, salt, and lime juice in a rice cooker and cook just as you would rice.
If you do not have a rice cooker simply add the quinoa, water, cumin, and salt in a saucepan, bring it to a boil and then reduce the heat to a simmer. Cook covered, until the liquid has been absorbed and quinoa is tender {about 20 minutes} and add cranberries once the quinoa is done cooking.
While the qunioa is cooking, saute the broccoli in 2 tablespoons olive oil over medium heat for about 2 minutes. Add garbanzo beans and saute an additional 2 minutes.
Remove the broccoli and garbanzo beans from the heat, and quinoa mixture and toss. Serve warm or cold.

Hi Mavis. This sounds so good, its going on my recipe list. I love quinoa and add it to soups and stews to help thicken them.
I dehydrate any gluts of cauliflower, broccoli, celery, zucchini, squash etc and use it in winter for soups and stews. It re-hydrates very well. I just throw them in to the pot with any other fresh veges. I also freeze veges for stir fries etc as well. I do small florets and is no need to blanch.

We recently had American friends staying with us … they’re from your part of the US, Mavis – Big Lake near Mt Vernon, just up the road from you a bit. They made us a broccoli salad that we really love, and it only has 4 ingredients.
Broccoli, red onion, dried cranberries, mayonnaise.
Chop broccoli & red onion, mix with cranberries and add mayo.
Sorry no quantities, just whatever you think is a good mix

I remember that salad, called broccoli sunshine salad. It sure takes yummy and you can play with the ingredients to suit your taste. I add bacon bits, some grated cheddar and raisins / dried cranberries as toppings. For dressing I mix apple cider vinegar and honey to the greek yogurt for the dressing. I make a huge batch of it and keep it in the fridge (keeps well) and have it for lunch and dinner when I get broccoli cheap. Here are some more for you to try:

cream of Broccoli Soup is always a favourite and my friends ask me for it, broth, onions, broccoli and a little milk, saute onions, simmer broccoli for a short while throw everything in a blender with a little seasoning (vitamix blenders rock). It is great served cold in the summer if you thin it out more, In winter I make it a little thicker and occasionally add cheese especially if I have bits of good cheese left over. I just guess on the amounts and I dry my own horseradish and add a pinch or two to the soup
