Remember when quinoa was HUGE a few years ago and everyone was like… wowie zowie, it’s the greatest thing ever? Ya well, it still is and this recipe for quinoa salad with feta, avocado and kale is the bomb diggity. Seriously. The Girl and I have made it 3 times since she received the book Run Fast Eat Slow for Christmas and Mrs. HB has made it twice. The salad not only satisfies, but it’s filling. And if you are trying to eat a little less these days… it’s a keeper. That’s for sure.
This salad keeps well in the fridge for several days and would be a great candidate for Sunday night meal prep.

PrintQuinoa Salad with Feta, Avocado and Kale
Ingredients
- 1 cup quinoa
- 3/4 teaspoon sea salt
- 3 cups loosely packed kale (chopped)
- 1 red bell pepper (seeded and chopped)
- 2 tomatoes (chopped)
- 1 jalapeno (seeded and chopped)
- 1/2 sweet onion (chopped)
- 1/2 cup cilantro leaves (chopped)
- 1 15 ounce can black beans (rinsed and drained)
- 1/2 cup pumpkin seeds (toasted)
- 1/2 cup feta cheese crumbles
- 1 avocado (sliced)
- 1/3 cup + 1 tablespoon lime juice
- 1/3 cup + 1 tablespoon olive oil
Instructions
- Cook quinoa. I like to cook my quinoa in a rice cooker. It cooks just like white rice, so the most important thing to remember is to use the ratio of 1 part grains to 2 parts water.
- If you do not have a rice cooker, simply add the grains and water in a saucepan, bring it to a boil and then reduce the heat to a simmer. Cook covered until the liquid has been absorbed and grains are tender {about 20 minutes}.
- While the quinoa is cooking, toss all dressing ingredients together except the avocado. Once the quinoa has cooled fold in the quinoa. Pour the dressing over the salad and toss to coat. Chill in the fridge until ready to serve. Just before serving top with avocado slices.
Notes

This looks like a good lunch to take to work. My hubby doesn’t like quinoa so I never make it for us. I have a meyer lemon ready to be picked; I wonder if it will taste ok if i switch out the lime with lemon.

I absolutely love the recipe!
It makes at least 5 days of meals for me and I have been eating it everyday . No one else will eat it in the HB family. So more for me! I take it for lunch or eat it for dinner and have put roasted chicken or baked salmon with it. Yummy in my tummy!

most quinoa I see says to rinse before cooking.. I assume I would need a mesh collander? I only have the larger hole collanders.

This was delicious. I had everything on hand except for limes. I did have lemons though. I found them dropped in the street when walking the dog. A family around the corner has a huge tree. My daughter thought it was funny that I’d tell her that I made a salad with fruit I found on a walk.
