If you have an abundance of fresh raspberries you may want to give this qunioa with raspberries and oranges dish a try. Not only is qunioa a super grain, but it’s super delicious too!
Ingredients
1 1/2 cups reduced sodium chicken or vegetable broth
3/4 cups quinoa {find quinoa online}
1 cup raspberries
1/8 teaspoons ground black pepper
1/2 cup walnuts, chopped
1/2 cup dried raisins
1/4 cup parsley, chopped
1 mandarin orange, peeled and segmented
Directions
Place the quinoa and chicken broth in a rice cooker and cook just as you would rice.
If you do not have a rice cooker simply add the quinoa and broth in a saucepan, bring it to a boil and then reduce the heat to a simmer. Cook covered, until the liquid has been absorbed and quinoa is tender {about 20 minutes}.
Once the qunioa is done cooking, let it cool until it comes to room temperature. Place the qunioa in a serving bowl and fold in the remaining ingredients.
