In an effort to get rid of use some of the ground pork that has been lingering in my freezer since last summer, I decided to make a batch of homemade egg rolls. The original recipe called for frying the egg rolls in a pan of peanut oil. Ha Ha Ha. Do you know how expensive peanut oil is? Holy canolies.
So I baked mine instead.
Monkey Boy loved them. He even ate the leftovers for breakfast the next day.
Recipe: Baked Not Fried Pork Egg Rolls
Ingredients
1 pound ground pork
1 teaspoon ground ginger
1 teaspoon garlic powder
2 cups shredded cabbage
2 ounces shredded carrots
8 (7 inch square) egg roll wrappers
1 tablespoon olive oil
Instructions
- Season pork with ginger and garlic powder and mix thoroughly. Heat mixture in a medium skillet, stirring, until pork is cooked through and no longer pink. Set aside.
- In a separate bowl combine the cabbage, carrots and reserved pork mixture. Mix all together.
- Lay out one egg roll skin with a corner pointed toward you. Place about a 1/4 cup of the cabbage, carrot and pork mixture on egg roll paper and fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of the egg roll paper with water on the final corner to help seal the egg roll.
- Place egg rolls into a lined cookie sheet and brush with olive oil. Bake at 400 degrees for 10 -12 minutes or until lightly browned. Serve with a side of soy sauce.

Do you eat with chopsticks? I recently learned how to use them with the help of Fred & Friends Chimpsticks Chopsticks. They are a blast to use. Even at my age. Amazon currently sells then for $7 a set.

I’ve made them like this before as well, but the last time I did them I used an egg wash on the outside rather than oil and they turned out even better! I’ve got a rogue package of ground pork in the freezer, too….yuck. LOL

Yum! Hubby has been asking for homemade eggrolls so we’ll have to try this recipe! FYI- if you’re still trying to use up pork, try some pizza egg rolls. Pork, italian seasonings (oregano, garlic, etc), tomato paste, crushed tomato, green pepper, and mozzarella (sorry, I tend to forget to measure). Or, you could try to make breakfast sausage…..biscuits and gravy….mmmmmm……

The recipe calls for 8 egg rolls. I am assuming it makes 8.
