Recipe – Broccoli Soup

Ingredients

Scale

1 1/2 pounds fresh broccoli
5 green onions, chopped
1 carrot, chopped
4 tablespoons butter
3 tablespoons all-purpose flour
4 cups low-sodium chicken broth
1/2 cup sour cream
1/4 cup Parmesan cheese shavings
1/2 teaspoon salt
1/4 teaspoon pepper


Instructions

  1. Melt 4 tablespoons butter in heavy medium pot {I used a stir fry pan} over medium-high heat.
  2. Add the broccoli, onion, carrot, salt and pepper and saute for about 5 minutes.
  3. Next add the flour and chicken stock.
  4. Stir and reduce heat to a simmer and for about 10 – 15 minutes until the broccoli is somewhat soft.
  5. Next, pull out your immersion blender super powered blender {we love the Blendtec} and puree the soup.

Notes

Serve warm with croutons or shaved Parmesan on top.
