Recipe – Chocolate Chip Banana Cookies

Ingredients

1 1/4 cup all-purpose flour
1/2 cup chocolate chips
1/2 cup rolled oats
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/2 teaspoon vanilla extract
3/4 cup firmly packed light brown sugar
6 Tbs. unsalted butter, at room temperature
1 ripe banana, mashed
1 egg
1/2 cup raisins or cranberries


Instructions

  1. Preheat oven to 325 degrees.
  2. In a bowl, stir together the flour, oatmeal, baking soda, salt and cinnamon.
  3. In a large mixing bowl, cream together the brown sugar, butter, vanilla, banana and egg until well combined.
  4. Slowly stir in the flour mixture.
  5. Fold in the chocolate chips and raisins.
  6. Using a 2″ cookie scoop place cookie dough balls on a silpat lined cookie sheet and bake at 325 for 12 minutes or until lightly browned.
  7. Cool on a wire rack.

Notes

Serve with a big ole’ glass of milk.
