Guess what were are having for dinner tonight? Breakfast! I made some mini bacon quiches this afternoon and now all that’s left to do is have Monkey Boy make a few pancakes to go with them. As soon as I finish typing up this recipe, I’m tossing on my pj’s, and calling it a day. Who says you can’t eat breakfast for dinner and be in bed by 7pm? I’m tired.
Plus, I have to wake up at the crack of dawn anyway to let all those chickens out every stinkin’ morning. Can you believe how early the sun is rising lately? Holy Canolies.
PrintRecipe: Easy Mini Quiche with Bacon
Ingredients
5 fresh eggs
1/4 cup green pepper, chopped
1/4 cup grape tomatoes, chopped
1–2 green onions, chopped
2 slices cooked bacon, chopped
1/4 cheddar cheese {or whatever kind you prefer}
1/4 cup milk {I used 2%}
salt and pepper to taste
6 egg roll wrappers
Instructions
In a large bowl combine the the ingredients except the egg roll wrappers and olive oil.
Using a biscut cutter cut circles out that are about 1 inch larger than the base of a muffin tin.
Brush muffin tin with olive oil and carefully place cut out egg roll wrappers in the center of each tin.
Fill with egg mixture until just below the top of the egg roll wrapper.
Bake at 350 degrees for 1o minutes or until the eggs are lightly browned and cooked in the center.
Serve on a fancy platter.

Actually I bought the 2 pk of cake plates at Costco on Dec. 26th two years ago. Did you keep give the other jadeite cake plate to your neighbor after the baby shower or keep it? I love jadeite colored things. They were a steal at $19.99 for the 2. Unlike you, I LOVE COSTCO and their prices. We switched our home and car insurance to Costco and saved over $700 a year.
