Brown bananas are the key to flavorful muffins. If you can’t smell them from the next room, they aren’t ripe enough yet!
And espresso powder {or instant coffee granules} help to pump up the banana flavor of the muffins too.
Recipe for Banana Nut Muffins
Ingredients
1/3 cup unsalted butter, melted
3/4 cup sugar
2 ripe bananas, mashed {about 1 1/4 cup mashed}
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon espresso powder mixed with a Tbsp of hot water
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup of flour
1/2 cup chopped walnuts
Instructions
Preheat oven to 350°F. Line a muffin tin with paper liners, or butter muffin cups
In a large mixing bowl, combine the butter and sugar until smooth. Add in the mashed bananas, egg and vanilla extract and espresso powder mixture and combine until smooth.
Add the dry ingredients into wet and stir until it is just incorporated, being careful not to over mix your batter.
Fill muffin cups 2/3rd of the way full and bake at 350°F for 20 minutes or until a toothpick inserted into the center of the muffin comes out clean. Let muffins cool for a few minutes and then eat!! YUM.
Store extra muffins in an airtight container or pop into the freezer for a quick breakfast on the go at a later date.

Yum! I ca t wait to try these. I buy ripe bananas at our store. A big bag for $2. I have 2 bags of 4 in vacuum sealed bags in the freezer. I need to take some out and make these soon.

Years ago, I saw folks on a cooking show make banana bread with different methods and ingredients. The most noteworthy change was to microwave the peeled bananas for about a minute before you mash them. It really amps up the flavor. The cooking show folks gave scientific reasons why this was important but I promptly forgot all that!
Now, each time I make banana bread I do this and the difference is remarkable.
