Ingredients
1/3 cup unsalted butter, melted
3/4 cup sugar
2 ripe bananas, mashed {about 1 1/4 cup mashed}
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon espresso powder mixed with a Tbsp of hot water
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup of flour
1/2 cup chopped walnuts
Instructions
Preheat oven to 350°F. Line a muffin tin with paper liners, or butter muffin cups
In a large mixing bowl, combine the butter and sugar until smooth. Add in the mashed bananas, egg and vanilla extract and espresso powder mixture and combine until smooth.
Add the dry ingredients into wet and stir until it is just incorporated, being careful not to over mix your batter.
Fill muffin cups 2/3rd of the way full and bake at 350°F for 20 minutes or until a toothpick inserted into the center of the muffin comes out clean. Let muffins cool for a few minutes and then eat!! YUM.
Store extra muffins in an airtight container or pop into the freezer for a quick breakfast on the go at a later date.
