Recipe – Roasted Corn with Bacon -The Best Side Dish Ever!

Ingredients

6 slices bacon {reserve bacon drippings}
4 cups corn kernels, fresh
3 scallions, sliced thin, including greens
1 tablespoon unsalted butter
1 teaspoon garlic, minced
1/2 teaspoon black pepper
1/2 teaspoon salt


Instructions

  1. Fry bacon til nice and crisp. Set on paper towels to train.
  2. In the same pan with the bacon grease fry scallions until lightly browned, add corn kernels, butter, salt and pepper.
  3. Cook until the corn mixture is golden, stirring occasionally {about 5 minutes}.
  4. Add garlic when there is about 1 minute of cooking time left. Serve warm or cold.
