I’ve only eaten at Red Lobster a few times, but when I have, know what I remember? Not the lobster. Not the fish. Not even the shrimp or crab or chowder. It’s the buttery, cheesy, garlicky biscuits that haunt my dreams. And after seeing a box {mix} of them at Costco the other day, I can’t get them out of my head. I’ve seen a number of versions of copycat recipes for them, so I decided to combine some, tweak a few and come up with my own version.
Um, YUMMMM! You guys, these biscuits are THE biscuits you write home about. No joke. Make them. Devour them. Dream about them.
Ingredients
2 cups flour
1 tablespoon sugar
1 tablespoon baking powder
2 teaspoons garlic powder
1/2 teaspoon salt
1 cup buttermilk {How to Make Buttermilk}
1/2 cup butter, melted
1 1/2 cups cheddar cheese, shredded
Topping:
3 tablespoons butter, melted
1 1/2 tablespoons fresh parsley, finely chopped
1/2 teaspoon garlic powder
Preheat oven to 450 F. Line a baking sheet with parchment paper {I use Silpats} and set aside.
In a large mixing bowl, combine dry ingredients {first 5 ingredients}. In a separate bowl, whisk together buttermilk and butter and pour over flour mixture. Stir just until moist and then fold in the cheese.
Scoop the batter out using a 3 tablespoon measuring scoop and plop onto baking sheet. Bake for 10-12 minutes or until golden. While biscuits are baking, whisk together all topping ingredients. Brush each biscuit with topping as soon as they come out of the oven. Enjoy!

I love those biscuits tooo or three or four. I am anxious to try your recipe. I thought they had some Old Bay seasoning in them.
Ashley says
I’ve seen recipes with old bay in them. I make mine like Mavis’s, but add onion powder and chives.

I have bought the mix from Costco. Super easy, delicious, and cheap! If you don’t have the time, ingredients, or inclination to make them from scratch, the boxed mix is highly recommended. Each batch makes 10 biscuits, so works out to 20 to 25 cents each (price varies at Costco). We love them!

Mavis, do you think these could be frozen at the just-before-baking stage?
Mavis Butterfield says
Great question. I don’t know the answer though because I haven’t tried it. Let us now if you do though.
