Yesterday after having to spend a whopping TWO HOURS sitting at the DMV to apply for a new drivers licence and then having to return to the DMV because they accidentally deleted my photo, by the time I made it home, I was kind of cranky and done for the day.
Luckily though, the HH offered to make dinner. And roasted Brussels sprouts with blue cheese crumbles is what he came up with. And they were delicious. So tasty in fact, I had to share the simple recipe in case you wanted to make them too.
1 pound Brussels sprouts
4 to 6 tablespoons Extra virgin olive oil, to coat bottom of pan
2 tablespoon balsamic vinegar
Salt and pepper to taste
1/4 cup Blue cheese crumbles
Preheat oven to 350 degrees.
Trim the bottom of the Brussels sprouts, and slice each sprout in half from top to bottom. Heat olive oil over medium-high heat and place sprouts cut side down in the pan {making sure there is only one layer of Brussels sprouts in the pan at a time}. Sprinkle with salt and pepper and cook undisturbed, until the sprouts begin to brown on the bottom.
Transfer Brussels sprouts to a baking pan and cook at 350 degrees, checking every 5 minutes or so until tender {about 15- 20 minutes}.
Finish at 400 degrees to crisp up the sprouts and check often so as not to burn.
Once the Brussels sprouts are finished cooking, place in a bowl and gently stir in balsamic vinegar. Serve warm with crumbled blue cheese sprinkled over the top.

My mom would make a dish called Copenhagen Brussels Sprouts for holidays. It had brussels sprouts, bacon, blue cheese, scallions, canned mushrooms and Italian dressing. I think it’s disgusting. Everyone else in my family loves it. Now that my mom’s gone, I’m now responsible for making it.
