Yesterday for teatime I made a batch of Rolo brownies and oh my word they were crazy good!!!
I first discovered Rolo brownies when I was in Tetbury, England last summer and haven’t stopped thinking about them since.
Yesterday as I was scrolling through photos on my phone when a picture of the Rolo brownie I bought caught my eye and so I decided to go for it and make a batch.
Basically, I took my favorite brownie recipe and removed the nuts and added in the Rolo candies and they turned out perfectly. Just as I had hoped they would.
These Rolo brownies are fully loaded with chocolate chips, Rolo candies and marshmallows.
YES, marshmallows!!
If you’ve never made brownies with marshmallows before you’re missing out!!! You’ve got to try it. The marshmallows really add to the texture of a pan of chewy brownies. In fact it’s rare these days that I’ll make a batch of brownies without them.
So if you’re looking for a new sweet treat to try, go grab yourself a few rolls of Rolos and give these delicious brownies a try. You’ll be so glad you did! So glad you did my friend, so glad.

Rolo Brownies
Ingredients
- 3/4 cups all purpose flour
- 1 cup sugar
- 1/3 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup + 2 1/2 tablespoons unsalted butter at room temperature
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 tablespoon light corn syrup
- 1 cup chocolate chips
- 3 {1.7 ounce} packages of Rolo’s candy, unwrapped
- 1 1/2 cups mini marshmallows
Instructions
Preheat the oven to 350 degrees.
Combine the first 9 ingredients in a large mixing bowl and mix on medium speed for 2 minutes.
Fold in the chocolate chips, Rolo’s candy and marshmallows, making sure everything is coated well.
Spoon into a well greased {or parchment lined} 8×8 baking pan.
Bake at 350 degrees for 35 – 38 minutes or until a toothpick inserted in the center of the pan comes out clean and the brownies have moved away from the sides of the pan slightly.
Cool brownies in the pan for 1 hour before slicing.

Holy cow! My blood sugar just jumped as my mouth was watering. I think I’ll have to pass on this. Don’t want to kill my diabetic friends. ( this may or may not mean I won’t make them and eat them secretly…..)
