I pulled some breakfast sausage out of the freezer the other day and decided to whip up this sausage and apple cheddar biscuit bake for breakfast. The recipe has been adapted from good old Betty Crocker. If you have company coming over, or have a large crew, this is a great casserole type dish to serve. All my peeps loved it!
Ingredients
16 ounces pork sausage
3 tart apples, chopped {I used Granny Smith}
1 onion, chopped
6 eggs
1/2teaspoon salt
2 1/4 cups Gold Medal all-purpose flour
2 1/2teaspoons baking powder
2 teaspoons sugar
3/4teaspoon baking soda
1 teaspoon salt
6 tablespoons unsalted butter, cut into 1/2-inch cubes
1 cup cheddar cheese, shredded
1 cup buttermilk {How to Make Buttermilk}
Preheat oven to 4oo degrees.
Butter a 13×9-inch baking dish and set aside.
In a large saucepan, cook the sausage, apples and onion over medium until the apples have softened and the pork is fully cooked. Once the sausage mixture is cooked, spoon it into the bottom of your baking dish.
Whisk the eggs together and then pour the eggs over the sausage mixture.
In a large bowl stir together the flour, baking powder, sugar, baking soda and 1 teaspoon salt. Cut in the butter until mixture resembles coarse crumbs. Stir in the shredded cheese.
Slowly stir in the buttermilk, until just combined. Using a 3 tablespoon cookie scoop, evenly place 15 dough balls on top of the sausage, apple egg mixture.
Bake uncovered 25 minutes or until biscuits are golden brown and done in the middle. Cool slightly before serving.

Just wondering if the sausage could be replaced with bacon? We’re not too fond of sausage so I never have it pin hand.
