Scammaford $7.38 — As I was uploading the photos of the food we ate last week I couldn’t help but think we had the perfect combination of simple and ready made meals the past 7 days. Thanks to my stock up trip to Trader Joe’s at the beginning of January, mealtime was a snap.
Baked potatoes with butter, sour cream and bacon. Who doesn’t love that? We actually had baked potatoes TWICE last week for linner.
And avocado toast. It doesn’t get any easier than a slice of Dutch oven crusty bread with an avocado mashed across the top.
Big salads…
With all my favorite things! I did forget to add the pickled beets though.
I think from now on, everytime I go to Trader Joe’s I’m going to buy their little bag of avocados. 5 small avocados for $3.69 {or was it $3.99?} I remember but they were all perfect.
Trader Joe’s hatch chili mac and cheese. Holy cats batman, it is sooooo good! The HH said he could eat it everyday.

A plate of random bits for dinner. Hey man, painting by numbers is hard work! 😉 And yes, this totally counts as dinner.
Plus, a little leftover turkey and stuffing from the freezer. With a side of little green trees for color {and vitamins}.
It was a good week. With lots of veggies!
I’m thinking this week might be full of soup though. I woke up craving the HH’s gloriously delicious loaded baked potato soup. And with the temps headed lower again, I think I’ll have to add a pot of 8 can chicken taco soup to the menu as well. And maybe a chocolate cake.
Soup, bread and cake. That’s my plan for this week. What’s yours? Curious minds want to know.

If you haven’t tried the Oakhurst sour cream, I highly recommend it. I bought it a few weeks ago for the first time & oh my gosh I could eat it out of the tub with a spoon.

Fage is another amazingly delicious sour cream. Daisy doesn’t even compare.

We tried the Fage sourcream and found it too thick, the consistency just threw it off for us.

Last Friday I decided to have a “cooking day” so I could have ready-made meals. Here is what I will be eating (I am having the lasagna today):
1) Stuffed peppers (3) – (I cut up the rest of the bell peppers and froze them for future use)
2) A pack of Italian sausages (5 links)
3) 4 trays of lasagna (will make 1-2 servings each – depending on how hungry I am)
4) 1 lb. of bacon
5) 3 trays of eggplant parmigiana (1-2 servings each)
6) A double batch of orange sauce (to make orange chicken) 1 large jar (for the fridge) and 3 smaller containers for the freezer. (I love orange chicken and I already have cooked chicken in the freezer)
7) Small meatloaf – I cut it up and packaged 2 slices together (1 serving) – made 4 servings
8) French toast – 4 slices
It was a lot of work and there were a lot of dirty pots and pans but now cleanup will be a breeze.

I love the paint by number kits. I recently finished one with sunflowers, and now working on one with a very colorful sunset. The colors of both match my comforter well!
Since it’s so cold here this week, and basketball is keeping me busy outside of teaching (and school of my own), I plan on a lot of crockpot meals this week. We’re having some nice chicken patties today (BB night), sausage and kale stuffed peppers, Air Fryer fish sticks, crockpot Beef and broccoli (with cauli rice – BB night), and crockpot creamy chicken soup with ginger and tumeric (BB night). Leftovers will suffice for lunches and leftovers a couple days.
Still building my list of make-ahead meals, I think I’m going to try to make enough to last me until summer vacation! Wish me luck!

The Traders Joe stuff looks nice but did you check sodium content? If you have high blood pressure u need to make sure it’s ok for you to eat it.

I buy the reduced fat TJ Mac and Cheese. It isn’t quite as fabulous as regular Max and Cheese, but pretty good

If you haven’t tried Trader Joe’s “Everything but the Elote” seasoning, I’d recommend it. Salty, cheesy, smoky, and with a zing of lime, it’s great on corn but I also love it on avocado toast!

Last night my HH had pulled pork with cheese on tortillas and I had a hodge podge of leftovers. I also made a huge pot of curried tomato bisque from fresh tomatos donated by Costco and the shelter couldn’t use them so we are having that with salad tonight. The rest of it goes to the Ambulance service and showers for the homeless tomorrow. I pick up donated food from Trader Joe’s every Mondy and take to the local shelter but if there is only one or two of something the chef gives it back to me so I either cook it up for us or for the Ambulance service or it goes to one of the food pantries in the next town if there is a volunteer to drive it over there like there was today.(I like to support our first responders). We got about 30 dozen eggs today (I take out the broken one’s for my chickens) and the shelter gets them but today they had too many so they went to the pantry in the next town and someone volunteered to hard boil a bunch to hand out to the homeless. If you live near a trader Joe’s and have time to volunteer ask them what they do with their spoils and volunteer to drive it to your local shelter or food pantry. They donate every day here and a different organization picks up each day. THey also donate flowerswhich I take to nursing homes and hospitals. They are very community minded. If you haven’t tried their almond kringle it is an absolute must try, They have so many yummy foods at great prices
